Should I send the letter to the admissions office?

Around the end of February you can get the forms from the UF Admissions Office to appeal. Appeals can be filed as of March 1. However, the only grounds for appeal are that your application omitted a crucial factor about something that impacted your academic performance such as illness or family situation. UF will not re-evaluate your application file but only consider whether the omitted issue would have made a significant difference in the outcome of the admission decision. There are 200-250 appeals filed each year and of those only 4-5 are granted.

Do they consider updated grades and test scores?
