Whom Should I Ask for a Recommendation?

Ok. So I am going to ask 2 of these three candidates to write me a recommendation letter. I am almost absolutely sure that all of them will agree to do it, but my question is whom should I ask. I have already procured a rec from my AP Lit professor (she is separate from the other 3 candidates).

Should I ask:

My Spanish teacher?

I am most comfortable asking her. She already wrote me a recommendation letter for another program and has expressed that she would be happy to write a recommendation for me in the future. I've had her for two years and I am her best non-Native Spanish student. What I am concerned about is lack of diversity in recs.
Will colleges frown upon two language instructor recs.

My Physics teacher?

I have had this teacher for two years as well: for Chemistry and for Physics. I've come to her for help after school if I couldn't understand something, or to finish labs. She has expressed a willingness to help me by writing the recommendation; however, she said that she is reluctant because I have no intention of going into the science field at all (hopefully international Relations/ Poli Sci/ or Business). She fears that if she writes a rec from a scientific (in class) achievement perspective that she will not be able to write about how my achievements will integrate with my goals at their college. (I know that was worded weirdly, but I hope you understand what I mean.)

Math teacher

I am the least comfortable asking this teacher only because I've known her in-class for only one year. Furthermore, I am not sure if I am in the top ten of students her course (even though I have a 97 average). However, I did take her SAT Math Prep course, have shown an above-average mastery of Math in her course, and in instances where I did not understand the subject matter, I made sure to stay after school for extra assistance or study more and ultimately understood.

<<sigh>> I don't know who to choose. If someone could help demystify this for me that would be great.</sigh>

Of the three only two teachers are willing to write the recommendation. My opinion is that when someone is lukewarm about recommending you they are politely saying “no”.
