I sent my sat scores on to penn, Virginia, NYU, and Boston college on December 20th. The application deadline for each of these schools is January 1st. Will my sat score arrive in time? Should I be worried that they might not? Is it ok if they arrive a couple days after the application deadline?

It is tight as there are only 5 business days in between. It typically takes around 3-5 business day in non-rush hour. It is recommended to submit 2 weeks (10 business days) before application deadline.
Most likely you will be fine. NYU and BC accept scores that arrive after the deadline. UV appears to require scores by the application deadline, Jan 1, but that is likely a “soft” date in that a few days after will likely be OK (e.g., most colleges for regular admission don’t outright reject you if test scores or other supporting materials are late; instead, some time after the app deadline, usually late Jan or early Feb, the college will send a notice to you informing you that materials are missing and give you a second chance to submit them. Moreover, the scores are likley to be sent by next Friday anyway – CB’s sending of scores and the college’s receipt of them are now simultaneous events because sending consists of putting the scores in an online account the college has with CB.
Larger uni’s tend to download scores nearly every day, is what I’ve heard. You might not get an acknowledgement for awhile, given rush of materials coming in right before Jan. 1.
