Would this count as 3 "LAB" science classes?

Biology I, Chemistry I and Chemistry II AP

Would they count as 3??

Yes…

You did lab work didn’t you?

Yep. Unless your school is really weird.

Not necessarily as you need to get a copy of your school profile transcript as these courses could and are given with out the lab component. If you did not take the lab (and your transcript/profile would usually indicated if there is a lab component), then they will not count as lab sciences.

I just checked my son’s transcript and it does not indicate anything about a lab. The course description does, but not the transcript.

My son is currently a bio major. His high school transcript did not indicate that any of the several science classes he took were lab classes. No one ever questioned it. The colleges are going to assume that bio, chemistry and physics of all levels are lab courses.

our HS transcript does not list labs separately…

In all high schools I am aware of those courses are lab courses and your transcript will just show the course without any notation of a lab. The school provides course descriptions to colleges.
