*At first I thought "drying" was incorrect because it needs to be noun just like "growth...".. So i thought it was "dryness" but then I thought "but increase" was wrong. Because shouldn't it be-- "Storing bread DELAYS -- and -- but INCREASES the rate..."?</p>
