<p>I would say its the first choice, “that can be perceived by the human ear” just because the second choice is awkward and “in which” doesn’t really fit in the sentence.</p>

<p>How does “in which” not fit? When does one use “in which”?</p>

<p>Well, you use “in which” when a verb requires “in.” The verb “perceive” is a “verb+object” construction (i.e. “you perceive a sound” is correct while “you perceive in a sound” is incorrect).</p>

<p>Here are some examples of “that” and “in which”:</p>

<p>This is an object that I’ve had for a long time: I’ve had this object for a long time.
This is the shower in which I sing: I sing in this shower.
This is a chair on which I sit: I sit on this chair.</p>
