I have also taken all the Honors/Advanced courses that I was allowed to (they limit our classes)
One way to get a very rough idea of your chances is to compare your stats to those of admitted students at the schools that you are interested in.

25th/75th percentile ACT composite: 33/35
They don’t break down GPA percentiles, but they do report that 95% are in the top 10th of their graduating HS class.
More information would make it much easier to assess your chances. Income? Gender? Race? Legacy? Any unique life circumstances? Intended major?
That being said, your numbers probably aren’t going to cut it for Yale if your list of ECs is as underdeveloped as it seems (just being brutally honest). Your GPA is average at best (for Yale standards), and your ACT is decent (again, for Yale standards). I would still retake if you can to try and get it to 34/35. Yale can see a profile of your school, so they will understand your lack of APs.
What are your service hours contributing to specifically? 100+ hours isn’t a remarkable number, but if the time you put in was meaningful to you, then it can be a strong EC. Be sure to elaborate as much as you can about how the volunteering impacted you.
Spanish club pres and varsity cheer are fine, and NHS probably isn’t worth putting on your application unless you have a leadership position, or just commit a lot of time to it (more time than the average NHS member at your school).
Write killer essays and get good recs, and I’d say your chances are a bit below average. That could change depending on what your demographics as a person are like (race, socio-economic status, etc).
