Yes and No. They don’t add in a ‘tick this box to improve your chances’ kind of way, or an ‘oh, look, OP got a prize’. . They might add to your overall narrative: how you spend your time outside of the classroom, some objective assessments of what you can achieve, demonstration of continuing commitment to something and achievement within that arena. Pick ones you are genuinely interested in- there are very, very, very few that will impress AdComs just by the name.
Having worked in college admissions at any Ivy, no amount of APs can compensate for a dearth of ECs or evidence that you engaged in your school, community etc. For most highly competitive universities, it is extremely difficult to distinguish yourself in terms of SAT or AP scores, since thousands of candidates do equally well. My advice is not to underestimate the importance of your ECs, your essays and your recommendations.
Will internships distinguish myself? Or creating stem non-profits?
@deltaxsquared If UCs are your target, your current AP set should be fine. Our son took basically the same set (Physics instead of Bio) as a junior and got into all the UCs he applied to including several Regents scholarships. Like you, some kids at his HS took 5-6 APs as a junior. Follow this year up with another set of strong AP courses next year, get good test scores, put a lot of effort into your essays, and you have a good shot. Berkeley can be a crapshoot though, so make sure you have other choices you like too. Good luck!
