Will this hurt me in college admissions? Make me look less competitive?

No. Whether your CC credits will transfer to the university you attend is a different question. But it won’t impact admissions, assuming your schedule is balanced amongst all core subjects.
The grades you receive in your CC classes will be included in your college GPA, so this might be a factor when applying to grad school. Be fairly certain for the CC classes you are planning that you can get "A"s in all three.
It also depends on which college courses. Low remedial/developmental courses like intermediate algebra (= high school algebra 2) will not look anywhere near as impressive as courses that are higher level than AP courses like multivariable calculus.
@ucbalumnus I took intermediate college algebra the summer after sophomore year so that I could go into precalculus my junior year. I am currently a junior. This should I show I took initiative right?
