I know my ACT score is a couple of points low, but I was hoping that maybe my gpa would cancel it out (its just that I'm not a test taker at all). I also went to visit the campus back in October and just had an interview last night that went great! Could those steps possibly help me gain admission? Thanks for all the help!

Looks promising, especially if your grades have been going consistently up. ACT score would probably be a factor, but assuming the admissions also find your essays “great” I’d say you have a shot. At this point, it’s all a numbers game.
