<p>seiclan, I think I tried to make a similar recipe pareve by using margarine one year, because I intended to put it out after a meat meal. (We keep strictly kosher.) It was DREADFUL, so I made a note on my recipe that the margarine was probably the issue.</p>
<p>I make my charosett in the food processor but I am careful when I hit the on button (I don't leave it on I instead pulse it). In the food processor, I put the peeled cored chunks of apple, cinnamon, lots of grape wine, sugar and chopped walnuts ...then push on the pulse button (or on/off) until I get a chunky but not pureed product.</p>

<p>sieclan, momof3sons, I've made that pesach matzo roka for years with kosher for passover margarine, and it's worked out fine. Definitely better with butter (what isn't?), but it's still been delish without. I even did it last year with klp tub margarine, and it was still great. Why is this matzo roka different from all other matzo rokas? :)</p>
<p>My dad was a Hillel director when I was growing up and we used to make the Charoseth for the Hillel seder since we had the only kosher house in town; talk about gallons! If I remember correctly, we used to use the meat grinder to do the apples. The fun part was pouring in the Manishevitz - glug glug glug. We always ended up clogging the garbage disposal so the plumber was one of our Passover traditions.</p>

<p>worrywart, there is no more KLP mother's margarine. One pound blocks of KLP margarine from a variety of manufacturers are in good supply, or so I've read on the kosher chowhound forum.</p>
<p>We keep kosher but not so strict (maybe it's kosher style to those more observant) so we use Smart Balance, which is Kosher Parve but not Kosher Parve for Passover. It's ok for the matzo roka, and for the mashed potatoes. The light style gets watery.</p>
<p>worrywart-there is an abundance of Eden brand Kosher for Passover margarine in one pound blocks around here (NYC metro area) and my DS#1 has found it in the Chicago area. There is no Mother's brand made for Passover anymore. :(</p>

<p>p3t - I wrote myself a note last year that I didn't peel the apples and the charoset was "great". I haven't even thought about the charoset yet - spent the weekend making brisket and chicken soup for 24 PLUS veggie broth for my vegetarian D's matzoh ball soup :)</p>
<p>seiclan - I make the chocolate matzoh every year with toffee bits instead of walnuts. It is amazing - my MIL asks me to bring some whenever we visit, whether it is Passover or not.</p>
<p>Yes, I never use walnuts or any nuts since my daughter is allergic. The butter/brown sugar makes the most yummy toffee layer!</p>
<p>Try the toffee bits on top of the chocolate on top of the butter/brown sugar - truly divine! Use Brickle brand or similar - not the Heath chocolate-covered toffee bits - those would be too much even for my sweet tooth ;)</p>

<p>Not only am I not sure if they are kosher for Passover, I noticed when I bought them today (Health brand w/o chocolate) that they say very clearly "contains almonds". So sorry - I thought they were just butter and sugar :(</p>

I couldn't have a Passover without it. I think that once you know how to make it, it's not that difficult. Besides, I like making those small balls.

<p>I noticed at Trader Joe's today they had beef that is certified for Passover.</p>
<p>My my, that matza brittle with the butter and brown sugar and chocolate is sweet. I'm talkin' sweet. I love it!!!!</p>
<p>Due to a family illness, I am having the first seder at my home instead of my sister in law. I am going to show my ignorance here, so please be kind. Do we light candles? If candles are lite, do we use Shabbat candles? I really do not remember lighting candles with my side of the family, but my husband's sister said she always does. </p>
<p>I looked on a Chabad site and there is mention of the Passover candle lighting and tells you which prayers to use each night. I am sure the site is correct and I am wrong, for the first time in my life :-) </p>
