Any truly good Passover recipes?

Thanks-- but I confess--sometimes we just "cheat" and have non-kosher wine.
I fully agree that you should bring the candy with a brand new, unopened platter. That guarantees to the host that the plate has not been used already for meat or milk. Very good thinking.
As for p3t as kind-- she plans to give the rotgut wine to a few on her "list"-- watch out!! LOL!!! :)</p>

Reposting this Apricot Kugel recipe-- it is amazing.</p>

<p>3 eggs
1/4 c. sugar
2 c matzo farfel, softened in water (just pour water over the broken pieces of matzo until it covers all the matzo)
2 c. cottage cheese
1 c. sour cream
1/2 c melted margarine
1/2 c apricot perserves
1/2 tsp vanilla
1/2 c raisins (softened in water)</p>

<p>Topping:
1/2 c chopped pecans
2 Tbl sugar
1 tsp cinnamon</p>

<p>Beat the eggs until light; mix in the sugar until thick.
Drain whatever excess water there is from the matzo, and drain off the water from the raisins, and mix all the ingredients. Sprinkle the cinnamon/nut mixture over the top.
Put in a greased casserole dish (Use a deep one, not a long rectangular one). Bake at 350 for 45-50' ( may sometimes take a little longer, depending on your dish). It will be like a souffle, and may not be totally firm. The center might be a little gooey, but shouldn't be too wet.
It is sooooo good!</p>

<p>I stopped in one store this evening- Selection of wines was pretty crummy BUT they had Mother's kosher for passover margarine!! Regular and lightly salted!! Who needs it sent to them? Yeah-- it might melt, though I remain unsure if that stuff is a solid or a liquid! ;)</p>

<p>And thank-you for the brownie recipe on page 1! I made 2 batches this afternoon and they're probably the best pesadic brownie I've ever made. I thnak you, my kids (care packages going out tomorrow) thank you and my in-laws thank you!</p>

<p>Who was it who needs the Mother's margarine?? The lady in line in front of me bought 4 tubs!! Maybe she plans to sell it at a hefty profit up north!! (it cost $4.49 for a small tub as it is!!!) And that stuff had 11gms of fat per tblspoon!!!! Yikes! :eek:</p>

<p>jym626 - I can't remember who said they needed it, but I think they said they needed sticks, not tubs, because they were using it for baking. I don't know why I remember reading that, but I do........lol.</p>

<p>Oh no! Now I'm having a panic attack over the Mother's sticks! And I was at our largest Kosher Market yesterday getting other things that are hard to find...I never thought that the magarine would be in short supply...gotta run!</p>

<p>jym626 and others: Our synagogue's men's club sells imported Israeli Kosher wine for Pesach...My H is the expert; he bought Galillee Chardonnay 2006 and two Yogev 2006 blends: Cabernet & Merlot and Cabernet & Shiraz...That being said, both the New York Times and the Wall Street Journal had Kosher for Passover wine reviews recently (you can search online for both).....Also, I can't believe that one of the large suburban Atlanta liquor chains didn't stock KP wines....Surprising.....</p>

<p>Thank you all for the recipes....Unfortunately, I have to cook gluten-free for Passover so recipes with "matzoh anything" are out...Not sure what the rules are for people who have dietary restrictions, but we let my daughter eat her regular food on Pesach...she can't really afford not to.....We are thrilled though that sooo many baked goods that are KP are also gluten-free!!!</p>

I haven't hit the liquor store yet. One of the supermarkets near our house had a large kosher section (there is a chabad nearby) so I just checked it. THey had wines, just not great ones (Carmel and that kind of stuff). </p>

<p>Wow-- how do you cook passover non-matzoh recopes!! Yikes! Glad you are able to find choices for your daughter.</p>

<p>jym: I actually found gluten-free KP wide noodles...I am making a noodle kugel ; my mom is making Tzimmes, and a green veggie! and the chicken is naturally gluten-free.......I also have recipe for Quinoa which she is allowed to eat....Honestly, breakfast is the hardest meal to keep observant for her.......but Passover has been difficult since she was diagnosed 3 years ago...and she used to LOVE matzoh.....there actually is GF matzoh, but it's not the same (and it costs, are you ready? $20/box....)!!</p>

<p>My daughter just paid 35 Eur for a large pack of matzoh in Spain. I am thinking she had to buy the 5 pound packs as that is all the store had. I suggested she ask the other Jewish students to buy a few boxes from her to share the cost. I don't think anyone likes matzoh enough to pay $60, but my daughter said she had no other choice.</p>

<p>So a follow up to my frozen gefilte fish loaf experiment. I just made it and it's really pretty good. Definitely better than the jarred stuff and reasonably priced.</p>

<p>The frozen gefilte fish loaf sounds like it's worth trying. Also, I just found the Mother's unsalted stick margarine - the supermarket must have just received a shipment, because it wasn't there last time I checked.</p>
