AP Chem, AP Physics B, or Biotechnology?

I'm trying to decide which class to take during senior year (yes, I realize it's a bit early to be planning such a thing). All three sound equally appealing to me, so at this point I'm mostly trying to figure out which would look best on my transcript.

A little back story: The school I currently attend is very small, and does not offer any AP or Honors classes. Thus, I can take only "average" Biology and Chemistry. Even worse is that the school doesn't even offer Physics. However, next year I will be attending a different high school with a variety of AP/Honors courses. I really want to figure out which science class to register for before preregistration rolls around. The problem is that I think I would be equally happy in AP Chem, AP Physics B, or Biotech. So, can anyone who has experience in any of those classes tell me what they're like? Can anyone who has taken both Physics B and Chem say which you preferred? Also, which class do you guys think would look best to colleges?

To digress a bit...I've been thinking about taking a couple of classes at the local community college. The only thing that has been holding me back is the worry that taking even 2 or 3 college courses would make me a transfer student. I haven't been able to find any straight answers yet, so...what exactly constitutes a transfer student? Taking just a few college courses during high school wouldn't make me one, right?

You won’t have any AP scores to show colleges, so the advantage to taking AP courses senior year are potential college credit later and demonstration of intent to take hardest courses available (and to show you can do the work through the first semester). Depending on what else you have to take or have already taken, why not take more than one AP class?
