Would what kind of AP’s you take matter much in getting into college?
I enrolled to take AP Art history and AP Enviromental Science in the senior year, but recently someone advised me to rather take an AP physics class ( which takes two periods in my school) than taking two easy(?) APs. What do you think? Would this change make my application form more impressive?

Some of the AP's are more impressive than others. In fact, colleges will give college credit for some and not others.

I personally think you should take whatever would interest you the most and what you feel would benefit you the most. If physics isn't your thing, there's no point in dropping two classes you like just to struggle with it for a year to "impress" colleges. Trust me, that is perhaps the most minor thing they look at b/c each person has different inclinations/abilities in different areas - they're not gonna penalize you for not being good in physics, or any other subject for that matter. If u like physics, take that. If you feel you would enjoy both art history and environmental science, take that instead. Its really that simple :).
