AP Subjects, which to choose? (self-study)

hey guys, I am planning on applying to some UK Universities this year, including the London School of Economics & Political Sciences, University College London and King's College London. however SAT scores and just a high school diploma are not enough for these universities, and they require A-level subjects to be taken, and obviously I can't really take these in the US.
(I scored 1320 on the old SAT, but my GPA is pretty low, somthing like B- I think. it doesn't matter really, cos the UK universities don't care about it.)
however, they do accept Advanced Placement exams as A-Level exams, since they are both post-high school and pre-college level studies.

therefore I am planning on self-studying some AP subjects, and taking them as a home-schooled student in May. however, I'm not sure on which subjects to choose, since AP subjects are so diverse.
I am planning on applying for courses in the following areas: Economics, Business Management, Mangement Sciences (Accounting & Finance), etc.
a typical offer for the courses I'm interested in ranges from A-leve results that are AAA/pass to ABB/pass, which is equivalent to AP results of 555/3 to 544/3.

so far I have decided that I'm definitely going to do:
AP Statistics
AP Calculus AB/BC (will decide which exam to take by March, but probably AB)
AP Music Theory

I am pretty sure I'll do fine with Stats studying alone since I've heard it's pretty straightforward and I've read through the material.
as for Calculus I've done pretty much before, and although I'm not sure I can go through with it, I'm confident to score a 4/3 at least, and if I study hard I might get a 5/4.
Music Theory is very simple for me since I'm a music student and most of the material covered in the exam I've done before and I'm very confident I'll be able to score a solid 5.

however, my problem is, I don't know what other subjects to choose (for my 4th subject), and whether doing Music Theory would be a good idea.
I have never studied economics before, and I don't know if it's worth going through? according to the university websites, as an Econ major you don't need any previous knowledge of Econ/Bus Studies, however a solid background in Math is needed, to which I think Stats and Calc will do. (and I also scored full marks in the SAT I Maths, and got a 720 in SAT II Maths IIC).
also, in the UK unis, the final result is very important, and I hope to reach a AAA/pass level (which will be 555/3 in AP language), so I want to know what subjects are more straightforward and easy to manage?
I've heard that Econ is pretty difficult to manage as an AP subject, and that Psychology is pretty simple to go through, but that's all hearsay.
other subjects I might be interested in studying apart from Econ and Psych are: Government & Politics, US/Euro/World History, and maybe English Language (not Literature). I don't know how difficult these subjects will be to manage, as I said, I need a solid 5 in order to impress the admissions tutors.

to make the long story short, I just want to know which AP subjects will be easier to study, so it won't take me a lot to get three 5's.

also, I was wondering whether when you take the Calc BC exam, you also get a grade for Calc AB? (as in I would get 2 grades?) and also, I was wondering if these the AB grade and BC grade would be treated as two different subjects (two different grades)? I understand that that is the case for Micro/Macro economics, but I don't know about Calculus.

any help or advice would be deeply appreciated, thanks!!
