How do AP exams compare to A Level Exams? And are there particular classes they like to see applicants take?
Impressed? no. APs are considered to be inferior to A-levels.
They will care most about courses that are related to the course you are applying to study. Note that if maths/further maths are listed as either required or recommended only Calc BC will count (not AB).
Loading up on random APs will not help your application. They expect you to show that you love your proposed subject by doing everything you can in and around the subject- especially in an academic sense.
APs are roughly equivalent to what Oxbridge-bound British students would take in the 10th grade (some GCSEs) or 11th grade. They’re generally (sometimes much) easier than A Levels. That’s why youre expected to earn 5s in the subjects they list per “course” ie., major (which you’ll find on the page related to each course. )
If you have 3-5 5s in the specific subjects they want, you will likely have a written exam and, if you do well, an oral exam which most students start preparing for in the summer.

Do you happen to know what they think of CLEP and SAT Subject Tests?
Subject tests are obsolete, but if you have existing scores that are not duplicative, Oxford will consider them & Cambridge won’t. They are seen as less valuable than APs. I don’t know about CLEP.
