are we supposed to just talk about it briefly or write an essay?

What is up with people always thinking there are unwritten rules?

It says "elaborate on it". Interpret that however you want.

i don't know how you can write an essay in that few words, but if you want, go for it. i took it to mean just go into more depth on one activity...

It's a teeny part of your application, so don't worry about getting it "right." Just pick an activity -- either one that means a lot to you, or perhaps one that most people would ask, "What's that?" -- and write a few sentences about it. You could talk about what you've done, what you've learned from it, why it means so much to you... they just want you to tell something more about what you do outside the classroom and why.
