Do ones related to your major- It’ll raise a red flag if you seemingly took random SAT IIs.

I’m planning on majoring in political science/government and/or history

I would suggest Math II and US History. If you need a third do World History

You only need two for most colleges. I would take one history and either English or a Science/Math (whichever you feel more proficient).
