Can I be interviewed at colleges in the next month or so as a senior and have that considered?

I know colleges still have visits and interviews in January and February but will those visits help me if I just applied there a few days ago?

Yes. Many schools interview over the winter. My D just got an email from an RD school saying that she would be contacted within the next few months.
