I know my stats aren't great because I'm really weak in standardized testing but I'm really involved in my ecs and research. How much will my AP scores/B+ in chem hurt me for an engineering major and what can I do to improve my application?

Chances at:
(most for engineering)
Harvard
MIT
Princeton
Cornell
Columbia
UPenn
Dartmouth
CMU
Duke

bumppp btw I have safety schools

You seem to be a very good applicant. As You noticed, not the perfect SAT score, but i am sure you can raise. The same with GPA and AP’s. But you are well rounded with your EC’s. If you should write good essays, you have good chances. Nevertheless, most of your schools are reaches:
Harvard- reach
MIT - reach
Princeton - reach
Cornell - low reach
Columbia - reach
UPenn - reach
Dartmouth - reach
Duke - low reach
