For students pursuing alternative projects or part time classes -- our son dropped a class last quarter, making him a part time student for all of 2 months, and our health insurance dropped him immediately. We had to purchase a temporary catastrophic plan. There are a number of companies out there that provide them. We were not able to obtain coverage under his university's plan for the summer quarter since he had not been under that plan for the previous quarter, and we had not been able to obtain it for the spring quarter because he dropped the class after the insurance enrollment deadline.

It's an individual situation of course -- we have friends whose dd dropped out of college and her parents' health insurance permits her to stay on as a dependent for however long she is living at home and financially dependent upon them.
