Christmas cookies

Thank you for the recipes. I printed out three of the ginger cookie recipes. I admit I am especially intrigued by the ones with the maple frosting!

I haven’t posted a picture of my Peppermint Candy Cane cookies. They should be tasty, but my kids actually laughed when I sent them a picture. There is a reason my sister is a designer with art degrees and I am an accountant. :laughing:

I will def repeat the maple ones. Mine did spread quite a bit so I made the scoop much smaller for a smaller cookie. I recommend baking a couple first to see how they bake.

Ooh, peppermint candy canes!
How difficult were they?
I think they would be fun to make with my 4y/o GS.

If they are the ones in the Betty Crocker cookbook…I’d say…not easy to make….at all. Making the dough is a breeze. But rolling it into little snakes and twisting into little candy cane without them breaking…a pita. That’s why I make Peppermint Blossoms now!

I will say…when my kids were little, I bucked up and dealt with those candy cane cookies.

And…they can be like the ugly duckling that turns into a beautiful swan when they are tasted and in your tummy.

I used the recipe posted upthread (I think by @sabaray ). Similar to Betty Crocker. I think next time I will roll the canes thinner and adjust baking time down a bit.

I just made the Lemon Cranberry cookies posted upthread. I took a chance and used a GF flour that I have been using to make pizza dough and they turned out great! Made a very tender, light cookie.
So a side note on the GF flour in case anyone is interested. I have been using Caputo Fioreglut GF flour to make pizza dough and it makes great pizza dough! The closest to the real thing I have found so far. It is a flour that comes from Italy and has gluten free wheat starch in it. I order it from Amazon.

It’s the same recipes I posted except instead of regular flour I used gluten free flour from Bob ‘s Red Mill Gluten free flour.

What is the difference between Mexican wedding cakes and Russian Tea Cakes?

In our house, we call them Snowballs, but you may know them as Russian Tea Cakes or Mexican Wedding Cookies. Same difference! They’re all irresistibly tender pecan cookies rolled in powdered sugar and they taste like heaven. And if we’re being honest, they’re actually my favorite cookie ever

The dough was really dry.

But the cookies are good. I used a lot of glaze on them in case they were dry.

I love all manner of crinkly cookies; this year, my first batch ‘failed’ and I like them better!
They are crisp and crunchy on the outside, and soft and chewy on the inside; here are my pistachio & cardomom ‘snowball’ cookies

ETA - they are gluten and dairy free - perfect!

Thank you! I use Martha Stewart’s recipe. I think the trick is for the dough to be really cold so the spread is minimal. I only make 8-10 at a time so the dough gets right back in the refrigerator to stay cold. It’s so firm that it’s almost hard to work with, but I manage to roll it out into roughly 4 inch long ropes. They are a bit of a pain, I’ll admit, but they’re festive and worth it to me.
