You asked for first hand experience and I should have said that my son went to Whitman and took full advantage of the outdoor activities there. First he went along on organized trips, then he gained the qualifications for leading backpacking trips. He climbed rocks, went on river trips and did a lot of skiing. Whitman is a very well regarded liberal arts college in Washington State and is academically challenging, but in an area close to nature and the college really helps the students take advantage of the surroundings.

Adams State University in Alamosa, Colorado. You can actually major in Adventure and they have a fabulous Outdoor Adventure club for all students. My daughter climbed a 14,000 foot mountain with ASU her first semester and went in numerous skiing and snowboarding trips.
