We made an amazing Meatless Monday salad last night. We were short on sweet potatoes so used a blend of sweet and regular - so flavorful, filling, satisfying but not heavy - I love chickpeas so I was a fan!
You could use whatever greens you have for the salad base. Avocados are optional too. I also didn’t have tahini so subbed in plain yogurt - the dressing was delicious!
These days we are learning a lot about substitutions, right?!
This thread is reminding me of the old show Door Knock Dinners, where a chef & TV crew would randomly knock and someone’s door and make them a gourmet meal from whatever they had at their house. Maybe Food Network needs to revive the show!
Was that the show with Curtis whatever his name - the blonde Australian guy? Where he would meet (flirt? pick up? ) women in the grocery store and offer to go home with them and cook their dinner??
I like Minimalist Baker and Cookies and Kate. I make a bowl that is similar to the Kale salad that @abasket posted. I’m actually making a variation of it tonight. In my recipe I spice and cook the chickpeas on the stovetop but I think I’ll try baking them in the oven with the sweet potato. I have a well stocked pantry and freezer and my husband will eat anything. I like to cook and generally wing it on a normal night. Only problem is that I make enough food for 4-6 and there are only two of us, so one night of cooking is really two meals. That means every few nights we eat leftovers. I made pork loin roast a couple of nights ago, but there were two loins in the package that I had defrosted so tonight will be strips of pork loin with sauteed onions, broccoli and a mix of mushrooms over some noodles. I might make gravy if it looks dry. I love smitten kitten but use American Test kitchens all the time.
A few days ago I made oatmeal raisin cookies with browned butter and sent some to one of my sons and to my FIL. Browning the butter (and then allowing it to cool) really adds a depth to the cookies.
I made a homemade chicken pot pie last night. I didn’t make the pie crust, but it turned out really good. I used left over rotisserie chicken, onions, garlic, peas, some seasoned Mexican corn from Trader Joe’s, carrots and seasoned it with cumin, thyme, salt and pepper. Made a sauce with chicken broth and flour. Everyone loved it and I think the cumin really made it taste good. We also have leftovers for lunch today.
I baked a honey tea cake with a lemon and lavender glazed yesterday in a bundt pan and it was also a hit.
Went to the store yesterday for the first time in 11 days. Stocked up on salad stuff, some fresh fruit. Crab cakes and balsamic glazed carrots last night. I made an old school dinner tonight that reminded me of my mother-pork chops , baked beans, onion with potatoes on the side. Haven’t made that in over a year. Tomorrow - probably tuna salad! Nothing exciting but comfort food seems appealing right now.
I think I’ll make a cherry galette this weekend with the Morello cherries from Trader Joe’s that I have in the pantry.
DH went to the store today so it was all fresh tonight. Fish, mashed butternut squash and snow peas. A nice change. He even found some fresh bakery bread ?
How often are you going to the grocery? I haven’t gone for 12 days, DS has gone once for a few things last week. I still have lots of stuff, but would like to stock up on some more things so I have plenty for the next 3 weeks. I’m planning on taking advantage of the Kroger Senior Hour. (I guess one advantage of being 60). I’m growing increasingly nervous with the peak in a few weeks. I’m planning on washing my clothes when I get back, too. Overkill? Maybe.
@conmama Try to find out if the senior hour is busier than regular timing. Some places it’s so crowded it defeats the purpose. IMO there’s nothing wrong with washing clothes when you get through with the errand. Wash / wipe more, think about it less. Just decide you’ll do it without second-guessing yourself.
As for frequency, I’ve been keeping it at two weeks apart at least. Like you am trying to anticipate upcoming peak. My goal is for next grocery run to last my household and my mother’s into the first part of May. I remember the passage in The Perfect Storm describing an epic food shop prior to sea voyage. Can’t get it out of my head.
I’m probably going once a week. With a list so I’m largely prepared for as quick a trip as possible. I’ll alternate where I go. Last week was Costco (so proud of them they had many precautions in place), this week maybe our local smaller produce market where I can get lots of produce, meat, dairy.
I have been just washing my hands in a series upon return from the store, after unpacking, etc. H has been completing undressing and washing his clothes after any trip out - like when he had to go to the tax guy yesterday.
Well, I’ve just spent 3 hours shopping, unpacking, organizing, cleaning up. It’s a large Kroger, I’d guess 50 people throughout the store, a little jammed in produce. Everyone was trying to do the 6 ft. And several had masks. I was a little nervous when I had to pass someone.
I’d say I have enough with what I have on hand and the huge amount I just bought for about 4 to 5 weeks. They only let us have 3 meat selections, so I’ll have to go one more time, but hopefully that will be a quick in and out.
I’ve been writing down menus for each dinner for this month, so I’m not overwhelmed. It lets me take stock of my inventory and make sure we use it.
