Cooking when you’re Staying home

@doschicos , Meatball recipe

1.25 ground beef
1 egg
2 T olive oil
8 T milk
2 T fresh Basil ( I had to use dry)
2 T fresh parsley
6 garlic cloves, minced as small as you can
3/4 cub bread crumbs
1/4 cup chopped onion
1 tsp salt
1 tsp pepper

  1. Mix egg, olive oil and milk on a small bowl
  2. Mix all other items together in a large bowl
  3. Add wet mixture to large bowl and blend well.
  4. Line 2 cookie sheets with foil if you have it.
  5. Roll 20 meatballs. I have 2 oven, so used both. You might have to do in 2 batches, or roll larger meatballs.
  6. Bake on lowest setting in oven. 350 for 35 minutes.
  7. I put my sauce in a stock pot and heated up, then and I put my cooked meatballs in the sauce and left on low for about 10 minutes.

I keep my yeast in the freezer and it lasts years. When the kids were all at home I bought the one pound vacuum pack at Costco and it stayed fresh until it was gone. I currently have two jars because I forgot there was a newly opened one in the freezer so I bought another.

I’m about to go pull my bags of chicken bones (left from the last three roast chickens) from the freezer and roast them again until nice and browned, then start a pot of broth.

@conmama , thanks for the meatball recipe! Sounds yummy and there’s some stale bread to make crumbs. I can thaw the ground beef while the bones roast, then make meatballs while the oven is hot.

I know I whined (haha - this is about to become a pun) about this problem before but let’s see if you have any solutions.

A week ago H told me to buy the mega pack of red seedless grapes at Costco. He proceeded to eat none of them. I ate some but grapes on their own are not my favorite (it’s a texture thing). Now I have all these grapes and they of course aren’t as fresh as they were a week ago but not bad.

Any thoughts on what I can do with them to put them into a totally different form? I thought about a grape jam (saw a recipe without pectin) but not sure that’s our things here. Not going to make the chicken grape salad (again, I’d eat but not H).

So.Many.Grapes! I’m so angry that he did not eat them and I hate to throw them away - being wasteful not is not in my language!

I’ll hang onto them for a day and see if anyone has any brilliant ideas. Can I somehow turn them into yeast?? (wink wink)

Freeze them and add them to smoothies for sweetness.

When I freeze grapes for smoothies I put them in 1/2 c. servings in baggies so that it’s easy to dump that 1/2 c into a smoothie. If you want to put them in one bag you can but they’ll stick together and become a big ice rock unless you individually freeze them on a tray before you put them in the bag.

You can roast grapes. Good on crostini with cream cheese or ricotta. Plenty of recipes online.

We don’t do smoothies but thanks. I’m not someone who reaches for “drink” besides water. But maybe I’ll put one bag in the freezer.

Roasting sounds interesting! I’ll look for a recipe!

I see some cake and salad recipes with red grapes online as well.

  • Freeze and use in place of ice cubes in cocktails....
  • Deoratively, put frozen grapes in a bowl around a dip to keep it chilled.
  • curry chicken salad with grapes
  • charcuterie board
  • make raisins!

I found a recipe for Italian Wedding Soup online that I am going to try this week. A HS friend mentioned that soup (and posted a recipe link) a few days ago. I actually googled a slightly different recipe that works with what I have at home.

Last night we made a lemon tart. D2 is home for a bit doing her grad school classes online and she is a fun cooking companion.

Has anyone mentioned allrecipes.com? You can use the ingredient search and it will give you recipes with those ingredients. I’ve been using it a lot lately. This week I used a lb. of navy beans. Last night it was bean enchiladas and tonight is bean and ham soup. I am proud to say that I have not been to a grocery store in 15 days.

I use Allrecipes all the time.

I also do the google for marinades for chicken, for example - and then look for ones I have all or most of the ingredients for. Then I pick the easiest one to make.

Sadly, I don’t think Costco carries the 2-lb packs of Red Star yeast any more. When they did, it cost about the same as 6 packets of Fleischman’s yeast in the supermarket, so it was a no-brainer. I have some in my freezer that I bought in late 2016, still kicking! Made challah every week since my daughter came home, and thinking about trying some other breads. Red Star is available online, but for much more than Costco used to charge.

I’m getting good at pushing out my trips to the market. Yesterday I pulled out 3 hamburger patties from the freezer. I defrosted them and crumbled and cooked two of them up for tacos. The third was a bit freezer burned so I cooked that one up for our dog who had surgery this week. I’ll use it to hide his medication. Had some corn tortilla which I used for the tacos. My H was thrilled as crispy tacos are normally a twice a year special occasion meal.
Today I made orange sweet rolls. My first attempt at a cinnamon roll recipe. Used oranges from my D. H and I each had one, wrapped a few for the freezer and will give the rest to my Son when I pick up the dog food he got for us from Costco. All will be done without close contact. My 2nd yeast recipe since entering this crazy period of life.
Tonight I’m trying a zucchini and pasta recipe I saw on Instagram. It will finish up the zucchini I have in the fridge. Again my H will be happy as I rarely cook him pasta.
@abasket my MIL likes to freeze grapes and have them as a low calorie sweet treat.

Hannaford had enormous packs of chicken breast meat a couple of weeks ago. I heaved one into my cart, portioned out the pieces, and froze them. This afternoon I dumped one of the chicken blocks into my dutch oven with a half stick of butter, chopped up three onions, peeled and squashed maybe six cloves of garlic. Added a cup of dehydrated broccoli that I’d gotten on a lark maybe a year ago. Topped it off with boxed chicken stock, salt, pepper, some dehydrated chives. It’s steeping in the fridge and going into the oven tomorrow. I’ll add cream and grated cheese and put it in front of my husband. If he does OK I’ll have some too. :slight_smile:

Now I’m not a shopper at all and we all have different ideas of fun, but if we were playing Family Feud and the topic was “Frivolous things you buy on impulse”… I suspect there is zero chance that “Dehydrated broccoli” would make it into the top answers.

Tonight was lamb burgers (sans buns) with curry and apricot aioli, green beans with lemon zest and toasted pine nuts, and ziti with roasted veggie medley mixed with Rao’s marinara. Kind of a hodgepodge but it was tasty.

H wasn’t home so I used the last few pieces of deli ham to make a sandwich and I had tortilla chips and freshly made (from the grocer) salsa.

I had suggested he take something to eat while he was in the bunker but said they have food brought it. So I asked him if he ate (they had Thai food) but he was tied up on calls and never got a chance to eat. He should have listened to me.

Tomorrow I’ll reheat the vegetable quiche that I got in my market pick up this morning, and I’ll make a salad.

You all make such elaborate meals, I feel like a slouch. :frowning:

I agree!! I can’t fathom having some of the ingredients ever in my pantry, let alone now. I’m cooking for 6 and trying to stretch every single ingredient for every meal. And I was prepared. I started stocking up in Jan bc I didnt think for one minute that what we were hearing from China was accurate. Even so, we go through a lot of food and I do not want to go into a store. I placed an online order I pick up on Monday. (Does Easter candy count toward good life choices? My 10 yr old will be having the skimpiest basket we have ever given.)

Tonight we are what was left of a ham, pasta, and frozen veggies. Tomorrow I’ll simmer the bone for broth for soup.

I feel the same.
