We had leftover mashed potatoes and a bunch of veggie odds and ends in the fridge… I made a brown gravy and put together veggie shepherd’s pie. It turned out very tasty. I had bananas nearing the end of their life and have banana bread in the oven. The recipe called for buttermilk which I did not have, so I used plain greek yogurt thinned with a little almond milk. We’ll see.
DH got to Costco this week during old folks hours. We had ribs in the instapot recipe from our instapot thread. Also did potatoes salad in the instapot, potatoes from farmers market box. DD did a grocery store run for our fresh veggies. Good dinner tonight.
Using up odds and ends, so tonight was asparagus potato soup and pastrami and Swiss cheese omelets. Tasted better than it sounds.
Tomorrow is one of my two days/week physically in the office, so will have S bake up some hot dogs and sauerkraut with baked beans on the side. Wednesday will be a chicken and veggie stir fry with the last of the Wegman’s frozen egg rolls. Thursday will likely be a supermarket trip (first time in two weeks except for Wawa run for milk and Doritos).
We are starting to run low on meat in the freezer but I was able to get two Boston butts last week at Sam’s so my husband smoked both all day yesterday. We had pulled pork for dinner last night. Dh pulled one of the butts (ha, that sounds funny) and vacuum sealed it for the freezer. The kids had leftovers tonight but we also had leftover grilled chicken from Saturday night so my husband and I had a large salad with the leftover chicken on top. We still have quite a bit of the pork left so I’ll make quesadilla or enchiladas with some of it.
I’m hoping Fresh Market is having their Tuesday ground beef/chicken sale tomorrow so I can restock my freezer. I have noticed several distributors selling packages of meat/poultry that can be ordered and picked up locally but most come in groups of four or amounts that would feed four, but there are five of us here, two of whom teenage boys with big appetites so the packages aren’t ideal for us. The meat selection has been very limited when I’ve been at the grocery store/Sams so I may have to order from one of these distributors and make do.
I finally had a chance to make the Greek dish (postitsio)–it took me time to get the ground lamb. (Placed an order but it didn’t come with the other groceries.) I used an Ina Garten recipe.

The recipe calls for small shells for the pasta–my high school friend’s mother (who was born in Greece) used penne pasta and I decided to use it. It’s a time consuming recipe, but worth the effort. H and D loved it. I send a text and photo of the pastitsio to my high school friend–she said it looked just like Mom’s!!
I have some pie crusts. I think I’ll make a quiche for dinner.
We have been getting farmers market baskets each week. They have been coming with 2+ lbs of onions each week and have been stacking up so tonight it’s onion soup. Did the base in the instapot. Just need to do the bread and cheese at dinner. Smells great!
Sitting on my back deck on this beautiful Southern California day having a tuna melt with a delicious white cheddar and a bowl of fruit and catching up with everyone here!
Got our virtual happy hour snack dinner set up on the patio. Sardines on toasted baguette slices, olives, Gouda, crackers,red bell pepper slices, cucumber slices.Goat cheese with a smoked peach jam… we won’t need dinner after this.
Can’t wait to see our friends!
It’s been a rainy, chilly day here so I made chicken & rice soup.
My D made French Lentil soup today; I’m not a huge fan of lentils, but this soup was really good. She thinks French lentils are the best lentils to use. It’s rainy, windy, and cold in my neck of the woods as well.
Happy to report that my Kroger pick-up today was 90% fulfilled vs. about 50% the last few times. I told the person loading in my groceries that I was extremely happy that most of my items were fulfilled. She told me that the store has finally almost caught up between inventory and shoppers and that they are hitting between 75-90% of most orders now.
Gives me hope that hoarding has peaked and that maybe at least regular daily household purchases will start to be normal again.
I made tostadas tonight with refried beans. It was my first attempt at using dried beans and I was happy with the results.
For my next baking attempt I’m considering a chocolate babka. Anyone have a recipe they like. Also now big of a job is it?

For anyone like me who isn’t a gourmet, and/or has a picky kid who likes “kid food”, here is the basic plan I have come up with. I try to shop every 10-14 days. Each week we will have:
Pasta night
Breakfast for dinner
Mexican (tacos, enchiladas, burritos, tostadas or loaded nachos)
A one-pot (could be chili, or a simple casserole like hamburger helper)
Asian (either my homemade “hibachi” which is steak marinaded in soy sauce and sesame oil, then cooked in wok with zucchini and onion; or all of Trader Joe’s frozen asian stuff-fried rice, potstickers, spring rolls)
An oven chicken (wings, shakenbake, etc)
Once a weekend we will have our version of every man for himself, I call it “scavenge night” or a carry out meal
As we warm up here the one-pot will be replaced with a grill night
I’m finding it easier for shopping and cooking each night to have a rotation.
Now that I have a crazy amount of eggs, I made a spinach and bacon quiche for dinner last night at my daughter’s request. However, one quiche won’t feed all of us and yesterday I was making my weekly grocery outing, this time to Fresh Market for their weekly ground beef/chicken sale. My son is not a fan of quiche, but loves Fresh Market’s chicken pot pie, so I got one of those (of course, it was $3 off on Monday so I missed that sale by a day, grr).
Tonight I’ll make pork carnitas enchiladas using some of our leftover pulled pork.
It’s been fun seeing what everyone is cooking. From the simple to the complex!
As much fun as it is trying new recipes, I will also say that sometimes a really good grilled cheese (I like to use a couple of different cheeses) and a bowl of tomato soup or bisque really hits the spot!
our misfits market delivery arrived yesterday - that is always a fun challenge, figuring out how to use fruits or veggies that aren’t in my normal repertoire. This box had a ton of stuff, most of which are pantry staples for me, but three that were new:
Shishito peppers
Rainbow chard
Romanesco cauliflower
I had already started dinner (rice and beans) when the box arrived, but a quick google search led me to serve a side of blistered shishito peppers (pretty tasty, though I don’t think I would go out of my way to buy them).
Breakfast today incorporated some of the chard into a green smoothie (pineapple, banana, cucumber and chard - YUM).
Not sure about the cauliflower, but I’m assuming I can use it as I’d use regular cauliflower? Roasted, mashed, or in an indian curry.
@DeeCee36 - our market had Romanesco on sale. I roasted the split into pieces head with olive oil and some garlic. We inhaled it. It is better tasting than roasted cauliflower. It is a funny looking vegetable, indeed.
