Cooking when you’re Staying home

@compmom Don’t feel bad if you don’t cook. My H does it as a way of reducing stress and it works for him. He loves it, but that doesn’t mean that everyone will find cooking therapeutic.

We made corned beef and cabbage last night and will have the leftovers tonight. It was so good, may make it another time, not just for St. Patrick’s Day!

I have some conchas baking in the oven right now! BTW, conchas are a traditional Mexican sweet bread roll. Yum.

Tonight I’m making a pretty simple chicken and mushroom and white wine recipe over egg noodles. I’ll steam fresh green beans to go with it. I made my first creamy tomato sauce with garlic and basil two nights ago and served it over tortellini with a green salad. Since my H and I are both at home working along with our 25 year old D we are running the dishwasher much more than usual since all meals are at home. Tomorrow night we plan to pick up pizza from a favorite local place to support them since we only have takeout food right now in San Diego.

Our market was nearly fully stocked today and I was able to get everything on my list. We’re having crawfish cakes, risotto, and green beans tonight. We gave up meat for lent and so far we’ve been able to stick to it.

We are trying to get take out twice/week to support our local favorite restaurants.

My husband is grilling pork tenderloin tonight. Our winter garden has produced the last of the bok choy he planted so I’ll sauté that and serve it with jasmine rice.

I didn’t realize he had planted broccoli also - we have at least two meals worth almost ready. Funny, this is the first time we’ve had a winter garden and it certainly is coming in handy.

One thing I forgot when doing all my shopping was that we would be running the dishwasher daily now with everyone home. I didn’t think to pick up more dishwasher tablets. I have plenty for the next couple of weeks but tried to buy more online from Sam’s today. Even tho they showed them in stock online and in the store, I wanted to avoid the store and have them delivered but it only gave me in store pick up as an option, with a specific window of 9-10am next Monday! Fortunately I don’t need them right away.

I buy my dishwasher tablet on amazon. If you have prime that’s a good way to try and stock up on things. I use subscribe and save on items I use frequently

I bought shampoo today on Amazon. And picked the slow shipping since I didn’t need it right away.

I’ve planned out dishes that can provide multiple meals. Made ox tail stew with red wine the other day, and bacon jam yesterday (because bacon).

I also have ingredients laid in for bolognese, which in addition to eating the traditional way with pasta, I also use for making egg bites (https://anovaculinary.com/easy-homemade-sous-vide-egg-bites/).

Then I got tired of cooking and picked up takeout for dinner yesterday, lol.

We have been cooking in so far this week, but we are thinking we will get carry out from one of our normal hang outs on Friday.

That’s our plan too. We have a few places we’d hate to see go under so plan to get carry out at least once a week like we normally would have.

I couldn’t find my usual kind of beans, so I grabbed whatever I could to make tonight’s chili. Guess what? It was my best ever chili. I quickly wrote down the recipe… move over family tradition. It’ll be Pandemic Chili from now!

I make enchiladas with retried beans, I dip both sides of 4 big tortillas in enchilada sauce. Then I use my ice cream scooper to put 3 scoops in each tortilla. I top it with Mexican blend shredded cheese. Then I roll the up and bake for about 20 or so minutes a 350. Make sure to spray pan with cooking oil.

I serve then with sour cream and salsa on top.

I’ve barely been cooking anything since the crisis started as my H only comes home to sleep. Hoping when/if NYS budget gets passed he can cut down on his hours. He does have COVID 19 issues to deal with but those deal mostly with the financing part - getting money to local government and federal money coming in.

Lots of good dinner ideas using refried beans!

Tonight, I made Lemony Asparagus and Shrimp pasta. I got the idea when I saw the lemons from our neighbors’ tree hanging on our side of the fence. :slight_smile:

Tomorrow, we’ll have pulled pork tacos using leftover pork from Monday’s dinner.

On Friday, we’ll order take out from a favorite local restaurant.

We will be eating the leftover corned beef for a while… bought a big chunk back in February thinking we would have our friends over for dinner. Oh well.

I always made our meals, including lunches, so this stay at home and work thing is not making a big change in my cooking behavior.

Thank you so much!! Taking a break from work and making lunch. Found all of the ingredients - wow! Even a package of gnocchi form TJ for which I had very few good ideas. :slight_smile:

Tonight is pollo asada tacos. I had some pollo asada from Trader Joe’s in the freezer and I have plenty of tortillas. I have cheese, cabbage, radishes, red onions, jalapenos and avocados. I also have fresh salsa. We will also make margaritas to go with it!
