Cooking when you’re Staying home

Tonight I’m trying a recipe from The NY Times cooking subscription- crispy chickpeas with ground meat By Mark Bittman. I’m using ground turkey since that is what I have defrosted. I will make rice or quinoa or maybe farro. I also made a Israeli cucumber/tomato salad and a red cabbage salad with basil.
Last night was pizza. We like the pizza dough from Whole Foods. I topped it with turkey pepperoni, artichoke hearts and kalamata olives. When my kids were young and teens we used to have homemade pizza on Sunday summer nights after a day at the beach. My H loved it so much that I’ve continued the tradition. This week made a trip to Whole Foods and now have 5 packs of dough in my freezer.

Tonight was soy-citrus marinated salmon, garlic-ginger stir fried broccoli and red pepper, orange rice, and Spicy Cheese Bread (from the Bread thread). Everything looked good and tasted better according to my crew. I, too, did a grocery run today (Trader Joe’s) so we have fresh everything for a couple of days.

Salmon with my citrus bbq rub, steamed asparagus and a cauliflower mash seasoned with garlic, horseradish and parmesan.

@deb922 well the trick to my husband liking the pizza…is that I cut the pizza ball in half and he had his own pizza - pepperoni and mushroom. He also has very juvenile taste- to him “Meatless Monday” might as well be “Poison Monday”.

This is somewhat of a problem because I am an adventurous eater! And that’s why “MM” - I wanted a night where I could just make something I really love that is not “basic”. He always has an alternative to eat on my MM days.

It was so, so, so good a pizza!

@conmama , it’s not hard just takes a little time. Took me about 30 minutes to get them how I liked them. Cut up one large sweet onion. Warmed a cast iron skillet and added some olive oil and 1 T butter. Threw in the onion and coated them with the oil/butter. Cook at medium to get them going then turn them down to sort of a low medium. After about 10-15 minutes sprinkle with a little sugar- like a 1/2 teaspoon. Keep stirring every few minutes . I cooked for about 30 minutes. I was not looking for a jammy onion but caramelized onions. Long and slow is the key!

Had a roasted dinner tonight. DH roasted chicken on the grill. I roasted farmers market potatoes, onions and purple carrots in the oven. Still enjoying farmers market salad.

@absdket, thanks! I’m making cheeseburgers over the weekend, and I love the sliders at restaurants with carmelized onions. I want to replicate.

You may be having more meatless Monday’s with the closure of all the meat plants, I thought it was hard finding chicken recently, now it will be worse.

@deb922 did you get the no knead bread to work? I made a very simple plain loaf and it was easy and came out very well. Nothing fancy. I can post the easy recipe. I am not a baker!

Last night I made a quiche for the first time in probably 15 years or so. We had some stuff to put on one so ours was onion, bacon, tomato and mushroom with Swiss cheese. It was very tasty and we will have the leftovers tonight.

Wednesday will be a free for all…eat anything you can scrounge.

Thursday I’m making a meatloaf and mashed potatoes and a green veggie to be determined.

Saturday we will order out. Friends recommended a place in town for pizza and suggested sausage/mushroom/spinach so we will get that.

Plenty of leftovers for Sunday.

Monday I will get out some of the frozen spiral ham leftovers from the freezer from Easter.

Right now, we aren’t starving here!

Nor are we! Today I made mac & cheese (regular and GF) and a cabbage-based salad that we will enjoy with some hot dogs from the delivery I received from my friend’s friend who is a meat wholesaler. Given the shortages I should probably place another order since we’ve started making our way through the initial delivery. Gorgeous day here so I’m excited to grill dinner!

@thumper1, I’ve tried the no knead bread twice and neither turned out. They rose in the bowl and looked great but when I baked them, both loaves were very flat. They did not look like the pictures. And didn’t taste that great, a little dense and chewy.

I have a very cheap Dutch oven that I got on clearance at target. Last week, I ordered the staub Dutch oven that was on super sale at sur la table. It was my birthday treat to myself. It’s being delivered today.

So I’m going to try again tomorrow and see if it goes better.

I don’t make non knead bread but the dutch oven wasn’t doing it for me until I started making the bread into rolls in the pot, think pull part type breads, so leave space between rolls to rise and cook. In a 5 quart I do 4 or 8 roll versions, IMO it allows the bread rolls keep that tension in a smaller shape and rise and bake better. The whole version for me in a 5 quart is just too big to hold that loaf tension and deflates. I use baking parchment in the dutch oven and when I have shaped I put a little boiling water in behind the paper (think a few tablespoons) to help with moisture during the rise and bake. I spray with pam or similar once shaped.

Tonight we are making Thai chicken meatballs as well as vegetable fried rice using leftover rice I’ve been saving in the freezer.

My husband’s sourdough starter has been a bust. It does not seem to be rising. He tested it by making one loaf, but it came out flat. We still ate it but after trying to rescue the starter, he decided to give up and start over. We will use what he has to make sourdough pancakes for breakfast tomorrow.

I’d bought some tater tots at Trader Joe’s and was saving for a night when we have burgers. Today, I discovered my son making some in the toaster oven. Apparently, the chef at his college makes special breakfasts for the athletes on game days. He makes some kind of scrambled egg dish that has diced up tater tots, among other things, mixed in. My son said he and his teammates love it and I guess he decided to recreate it today. Looked…interesting.

Three of us love lamb and one of us… doesn’t. So I don’t make it often. But I did make gyros the other night. Thinking maybe if I trimmed the fat off the leg of lamb being used, the one lamb disliking holdout might like it more I really trimmed the lamb very well before cooking. Trimmed too much and the gyros weren’t all that flavorful. And the holdout still didn’t eat any. Lesson learned.

Next time, leave more fat in and just plan on one holdout no matter what.

@deb922 I ordered two of the Staub Dutch ovens, one for me and one for my D. One of them is coming tomorrow and the other just shipped today.
Tonight is chicken cooked in green salsa in the instapot but with the slow cooker function. I’ll shred it and make soft tacos. I saw it on the Skinnytaste instagram post today. My husband loves anything in a tortilla.

The Staub Dutch oven is really nice. I got the aqua color. I wish I had thought of buying more for gifts

I know this isn’t the bread thread but I have wanted to say that I haven’t always had the best rise on the no knead bread upon baking either. But we eat it anyway!!! :slight_smile:

I also wanted to say there is definitely a time and place for a good tater tot! I saved a tater tot recipe the other day - need to dig that out!

Tonight we are having chicken thighs seasoned with paprika, garlic powder, cayanne and some other spices over cheesy grits and then roasted brussels sprouts. I made a small banana snack cake out of some extra over ripe bananas.

I have some lamb chops for H to grill and since D2 and I don’t care for lamb we will have halibut. I’ll roast some brussels sprouts and potatoes tossed in olive oil, balsamic and fresh garlic to go with it. It should be a simple dinner after we return from our 5 mile walk. I’ll boil the potatoes before our walk so they can roast quickly.

I haven’t had problems with my no knead bread recipe. It’s definitely a rustic loaf with some chew but I’ve never had it be flattish.

I had a lot of tomatoes we needed to eat. Unfortunately, all other salad ingredients that I ordered didn’t get fulfilled. I googled and found a Chinese tomato egg stir fry. I made it. Super, super simple and easy and yummy with rice and a side of freshly baked whole wheat rolls. Just about the easiest meal I’ve made in a long time.

I also had veggies to use up so tonight is eggplant parm with sides of sauteed mushrooms and onions and creamed spinach.

I love lamb, also, but my H hates it. So I just buy two small Aussie chops for me and he can have whatever he feels like making for himself.

Tonight I had ice cream for dinner! H came up from his lair later and heated up a can of soup.
