Cooking when you’re Staying home

Takeout from our fav pizza place as we lost power this afternoon. First time got takeout since SAH started.

The only good news about not having power is that I got to send H to pick it up - since he can’t get onto his work network without WiFi he can only talk to work on phone - which he can do in the car.

Still waiting for D to finish her Zoom meeting so we can have dinner tonight. We’re having roast chicken, salad, and homemade potato leek soup with crispy shallots as a garnish (IMO as good as the soup). We have many potatoes (got a produce box from a local independent market–it included 10 pounds of potatoes) and we already had 2-3 pounds. H spent a good part of the day making 6 quarts of the soup. We’ll drop some off for a friend who lives alone.

We are getting down to the dregs and need to make a grocery run. I made Stromboli tonight with pizza dough I bought at a NY pizzeria when I picked my son up for spring break/COVID closure. I found it in the freezer along with some meatballs I made and froze a month ago. The kids and Dh had meatball stromboli. For mine, I caramelized some onion and sautéed some red pepper. I also found some leftover grilled eggplant that needed to be eaten, so made a vegetable calzone for me. We had enough dough left that we made three extra that we can split and eat for lunch tomorrow.

Dh was able to salvage his sourdough starter just when he thought he was going to have to give up and start all over from scratch. He’s prepping a loaf now to bake tomorrow. We are going to use the discard to attempt homemade sourdough pretzels tomorrow.

Because we now have 36 lbs of flour thanks to Sam’s Club, I’m going to make “Bolinhos de chuva” this weekend. They are Brazilian fried dough balls. We discovered how to make them years ago when my son had to bring something Brazilian for a multicultural night at school. They are so easy and delicious.

My S made Ottolenghi’s Chicken with caramelized onions and cardamon rice. On the side he made roasted Brussels sprouts with balsamic vinegar. It was so delicious and a real treat to eat a meal without having prepared it! He’s turned into quite the cook.

@4kids4us Has your husband given his starter a name? I’ve seen that’s the trend in Instagram - Bread Pitt, Jane Dough, etc. :slight_smile:

Ribeye, roasted broccoli and corn on the cob tonight. First corn on the cob since last September - not local obviously but it was pretty good!

Since forever, DH and I have enjoyed a civilized cocktail hour sometime at or after 5PM with chilled beverage and noshes. (When ChoatieKid was at grandma’s one summer, she asked him once near dinnertime, “What do you think your mom and dad are doing right now?” CK immediately answered, “Enjoying a beverage–an alcoholic beverage.” He was correct.) Anyway, we often forgo dinner after cocktail hour if the noshes have been substantial. Tonight, they were. Cheers!

Tonight it was cauliflower & chickpea curry with rice - no fuss, no muss. I made the curry in the slow cooker and had rice in the freezer from a previous time.

Tonight I will cook The Pioneer Woman’s Chicken Spaghetti. Yum.

Tonight here-angel hair pasta with a lemon anchovy sauce, salad, artisan French roll from Pepperidge Farm, and a Mrs. Smith blackberry cobbler that I just took out of the oven. Bon appetit,
everyone!

I had the left over pizza from last night.

H made a sandwich.

Going to finally make the 11 pound turkey we’ve had in the freezer since T’giving on Sunday. I have a bag of stuffing left over and a fresh bag cranberries I froze then. So it will be Thanksgiving in May and enough leftovers to feed us for weeks.:slight_smile:

Made another giant pot of Ukrainian borscht from my TJ “loot”: shredded carrots, shredded cabbage, beets (had to cut those up), tomatoes, celery, onions, and garlic. Used chicken legs to make the stock (it simmered on the stove while I worked in the basement “C-Suite” ). Easy peasy food to make, and Mr. seems to enjoy it. Dinner… will eat something easily reachable.

BTW, TJ yesterday was ghostly empty but stocked to the ceiling with everything. No longer any limits on food items… Crowds and limits are the reasons I avoided TJ’s for a month. I guess one way to thin a shopping crowd is to tell the crowd that it is not allowed to buy stuff in stock in the quantity they need. :slight_smile: Then the folks will shop elsewhere.

Almost too nice to cook today!

Grilled rib eyes and chicken. I made sweeney potatoes (NYT recipe) and a big salad. Delicious.

@abasket it was a nice night. Burgers on the grill, canned baked beans and a salad. I made chocolate strawberry shortcakes for desert.

Beautiful night here, too.

Hot dogs on the grill, French fries and a tomato, red onion and Gorgonzola salad.

I had a bowl of Brownie Cookie Sundae ice cream for dessert.

BBQ Country Style Ribs but a few minutes on the grill and we ran out of propane and had to finish in the broiler. With oven roasted sweet potatoes and onions. I had some cauliflower to use up so made some buffalo cauliflower. Unintentionally, the whole plate was orange. :lol:

My D and I made a caramelized Vietnamese chicken recipe from the newest Milk Street Kitchen magazine. We had it on basmati rice. Turned out great.

Chicken and basmati rice here too! Tandoori chicken tonight on the grill.

Made husband my sous-packer as I portioned out yesterday’s meat purchase. He did a grand job dealing with my nerves as he held open the plastic storage bags while I tried to deal with a ten-pound bag of chicken thighs. Off to the freezer with those.

Leftovers this evening. Beef stew tomorrow. Or chicken soup with leeks. Or does beef go all right with leeks? Anyone?

Gorgeous day today, so we’re working outside and ignoring the kitchen until it rains again. I’ve got two wash loads hung on the outside line and couldn’t be happier.

Youngest son was craving smoked chicken so we biked to the store, got a chicken and he’s working on brining then smoking it now. I made some cole slaw so it will be ready by dinner time.

Wow, meat is getting a lot more expensive here! No more sales for the past few weeks and regular prices are going up. I’m not complaining - I understand there are big challenges at the packing plants and I’m just happy to find what we’re looking for. Just commenting because I’m normally a sale shopper (keep a loose track of what we use, buy and freeze it when it’s on sale) so the prices are multiple times what I normally pay.
