Cooking when you’re Staying home

@FallGirl, my daughter made that farro salad when she was home last. It was really good

I made something similar to that using quinoa instead - it’s what we had. It had a southwest feel mixed with black beans, corn, tomato and avocado. I like those types of salads because you can substitute whatever you happen to have on hand.

Tonight’s dinner was based off the fact that I wanted to make mango salsa. :slight_smile:

I’m marinating chicken and shrimp to stir fry. Making cilantro lime rice. We will probably make bowls. Sides of fresh corn, black beans, crumbled cotija and…the salsa!

Put anything in a bowl and I’m happy!

Inspired by someone’s post way up thread- we had scallion pancake tonight.

Sorry if a similar question was already answered, but does anyone know of a site where you can enter some ingredients and get recipe suggestions? We find ourselves preparing the same things over and over, especially with leftover meat and poultry. Thanks.

Most things are in stock around here, the prices are just high. Some days I do really good on fixing a nice meal, then there are those days that wind up being eat whatever you can find in the fridge or freezer. I have made tacos(only takes about a pound of ground beef, spaghetti and meatballs with garlic bread, grilled teriyaki chicken with garlic mashed potatoes, grilled maple-glazed salmon side with long grain and wild rice, pan-seared mahi mahi, grilled shrimp skewers, grilled hot dogs. That is just recently.

My oldest son that just finished his first year of college is obsessed with carbs and healthy eating. He eats a salad everyday and I have about 2 shelves in the fridge that are full of containers with his prepped salad ingredients. Green leaf lettuce, brocolli, zuchinni, tomatoes, carrots, strawberries, blueberries, grapes, cantaloupe, cheese, grilled chicken. He also adds garlic powder, seasoned salt, cayenne pepper, and toasted walnuts.

@Silpat all recipes is a good and I have just used google too. Did it today to get ideas for the eggplant, zucchini and over abundance of tomatoes we got in our farmers box. I found several good ideas.

I cooked a chicken thigh and leg that I found in the freezer and a breast for husband. Mine didn’t cook, my potato wasn’t done. Ate 1/2 of husband’s chicken and had to microwave my potato. It wasn’t my best result lol

^^^ I’ve had days like that too.

Cocktails and nosh in about ten minutes, then bourbon-glazed sea bass and IP lemon risotto with baby peas. Even though we no longer have any sense of days (retirement+SIP), we retain our habit of making nicer meals on the weekend. We do miss sharing them with friends. We’re doing a lot of virtual cocktail hours these days.

@BunsenBurner and @shellfell, happy to have you over! Everything was delicious and the extra filling for the blintzes will make a great base for some lasagna or baked ziti later this week.

Went through pantry this evening and found half a dozen Hershey’s dark chocolate bars (full size, not minis) leftover from Halloween. Had to verify they’re still good. :wink:

Dinner with the family was great, especially when we switched from Zoom to Skype. :slight_smile: Now vegging our on the deck… for dessert, we ate a pound of California cherries I scored at TJ’s yesterday. Cherries and other stone fruit are what makes summers great!

Let me save you all some money - the Costco purchased roasted chili-lime chicken breast was awful. Very, very salty and the chicken had a very unusual texture - it was almost as if they had taken trimmings from breast meat and fabricated a new piece. Save your money. I ate half a piece and the rest is going in the trash as even Mr. Sabaray did not care for it.

It’s Meatless Monday so I’m going to make the one pot garlic pasta posted here! I’ll make a side of chicken or something for H.

Tonight we’ll be having burgers. Planned to do out on the grill it last night, but the ground beef wasn’t defrosted in time. Will probably do them on the stovetop - today’s weather isn’t screaming “backyard cookout” like yesterday’s was. Will serve with mashed potatoes and roasted broccoli and carrots.

Daughter just finished all of her (online) high school classes for this year. She also just finished (20 mins ago) taking her (also online) AP Bio test. So tonight, her favs: individual beef Wellingtons with green peppercorn cream sauce, honey glazed carrots, and hasselback potatoes. For dessert- blueberry cobbler and vanilla ice cream.

Any favorite recipes for ground turkey? I’m bored with my usual uses such as taco bowls or burgers.
