Italian sausage with peppers and onions tonight. I made a Greek potato salad (recipe from a childhood friend who sent me a copy of her church cookbook)–basically, it’s potatoes with evoo, garlic, parsley, rosemary, basil, sundried tomatoes, shallots, and black olives.
@mom60, my family likes what we call sloppy toms…sloppy joes with ground turkey! Tonight we’re cleaning out the meat in the freezer - one strip steak and 2 pork chops on the grill, roasted rosemary and garlic potatoes and grilled asparagus.

I also like turkey in lasagne - in Run Fast, Eat Slow there is a recipe for marathon lasagne that has turkey, spinach, sweet potato, ricotta, marinara - it’s delicious. I will post the recipe if there is interest. It freezes well.
Tonight we had homemade chicken tenders and a Costco winner - Mexican street corn. Frozen off the cob - sauteed in a skillet, sprinkle with Cotija cheese, all included. It was good and easy for a Monday night.
We’re getting carry out for the first time in two weeks, just pizza.
As my husband was leaving, he commented about always having to remember his mask when he goes out. I said, “pretty soon it will be second nature, just like your wallet.”
20 minutes later he sends me a text. “Of course I forgot to bring my credit card.” ?
Fortunately I just called and gave the restaurant my number over the phone but found it funny he forgot it since I specifically mentioned his wallet, which is actually just a money clip.
On Wednesday nights we Zoom cook with friends. Each week someone chooses a recipe. We zoom at 5:30. Cook “together” and eat “together”. One of the highlights of my week. We try different recipes and have some socializing with friends.

I made the one pot garlic pasta tonight - and so did my D 2 1/2 hours away! Great for a fast dish. H liked it a lot. I found it a little heavy and could only have a small serving. I would add some kale or spinach at the end next time (but then H wouldn’t eat it!)
Cuban Piccadillo tonight. Ground beef, onion, garlic, peppers, cubed potatoes, in a tomato sauce with white wine, bay leaves, green olives, salt and pepper. Served over white rice.

@mom60 I make these about twice a month, even though the title has Thanksgiving in it… The original recipe called for muffin tins, not a loaf pan. So I make the muffins, and generally freeze half for later meals and I do not do the potatoes on top as pictured… Easy to pop in MW.

This thread must be getting to me. I woke up at like 5am with the notion to make a quiche - and then and there went through my head thinking if I had all the ingredients I would want on hand - and I do, so quiche tonight!
This is the muffin recipe I made on Sunday. They are delicious!
Apple Carrot Superhero Muffins Recipe
Makes 12
Ingredients
• 2 cups almond meal*
• 1½ cups old-fashioned rolled oats
• 2 tsp ground cinnamon
• 1 tsp baking soda
• ½ tsp fine sea salt
• ½ cup walnuts, raisins or chocolate chips (optional)
• 3 eggs
• 1 cup grated Granny Smith apple (about 1 apple)
• 1 cup grated carrots (about 2 carrots), peeled
• 6 Tbsp unsalted butter, melted
• ½ cup honey
*If you have a high-powered blender, you can make your own almond meal (flour). For 2 cups of almond meal, pulse 10 ounces of whole raw almonds on high speed until finely ground.
Preparation
Position a rack in the center of the oven. Preheat the oven to 350 degrees. Line a 12-cup standard muffin tin with paper muffin cups. In a large bowl, combine the almond meal, oats, cinnamon, baking soda, salt and walnuts, raisins or chocolate chips (if using). In a separate bowl, whisk together the eggs, apple, carrot, melted butter and honey. Add to the dry ingredients, mixing until just combined. Spoon the batter into the muffin cups, filling each to the brim. Bake until the muffins are nicely browned on top and a knife inserted in the center of a muffin comes out clean, 25 to 30 minutes. Allow muffins to cool completely before storing.
Store leftover muffins in an airtight container in the fridge or freezer. If you like them warm, reheat on low power in the microwave.
Nut Allergy?
We love the buttery richness of the almond flour, but whole-wheat pastry flour or whole-wheat flour can be used as an alternative in the Superhero Muffins. Increase the butter to 8 tablespoons (1 stick), since wheat flour is much drier, and reduce the oats to 1 cup.
Going for an easy one tonight - a big hearty salad and “baked potato bar.”
We’re going back to college tonight - tuna noodle casserole. I’ll probably include peas or broccoli in it tonight, something we never did in college.

@DeeCee36 - I was uninspired for dinner last night and decided to try the one pot pasta. I used a bow tie pasta and added some rotisserie chicken and broccoli and red pepper flakes and it was so good! What a great, easy way to make pasta. Thank you for the recipe.
Taco Tuesday for us here tonight which will be takeout from a favorite little taco place.
We’re going for easy tonight! Pesto pasta (TJ’s pesto), salad and Italian bread. Dessert will be the chocolate chip cookies I just baked!
