Cooking when you’re Staying home

Marinated flank steak on the grill with mushrooms and grilled eggplant, green beans and roasted Old Bay red potatoes.

Might have to go out for ice cream afterward. It’s a gorgeous evening here.

I haven’t had any trouble getting meat of any kind from my butcher.

I haven’t gone to fishmonger since the shut down because I never know if H is going to be free for dinner and I only do fish on the grill and he’s the griller.

I always have bags of frozen scrimp in the freezer so that’s been it for us.

I keep hoping things will ease up and his workday won’t be so long so I can buy some fish.

@doschicos No, job loss and subsequent loss of health insurance, loss of PT jobs with not enough earnings for unemployment, small business with no income and too many bills to pay. She told me it’s all pretty much financial difficulty and people not wanting to put out a large chunk of money.

Baled tonight and did not cook. Supported our favorite pizza parlor instead. With a farmers market salad.

Tonight we had grilled balsamic peach and chicken kabobs with fresh sweet corn on the cob and twice baked potatoes. Fredericksburg (TX) peaches were in the roadside this weekend. Yum!

Success! Kabobs were great. Our TJ had everything, except the gladioli- their flower section was kind of meh. I also got some artichokes, steamed then in instapot for 5 min on “bean” setting, then split in half, scooped out the fuzz, brushed with garlic olive oil, and grilled. Yum.

By supporting your favorite restaurants, you could be deterring rats from moving into residential ‘hoods. :slight_smile:

OMG.

I know its “cooking while home”, but as a first responder I need to occasionally cook in my home away from home. Cooking for 8-10 people has it’s challenges. Takes time to plan, shop, prep and then execute. Tomorrow being a holiday, we’ll usually step it up a notch.

I’ll let a probie handle breakfast. Typical eggs, hashbrowns and sausage/bacon
Lunch will be tri-color pasta salad with grilled chicken
Dinner I’m going with Prime rib, garlic mashed potatoes and broccoli
Dessert will be some Spanish pastries from local bakery
Will probably be about $150 day, about $15 per man/woman

All of our shopping is done locally within our community. Bodegas, Supermarkets, Butcher/Poultry shops, bakeries, coffee shops, ect…Do the math, $100-150 per house, 30 days per month, times 15 houses in district and its a good $50-60,000 per month just from us back in to the local community small businesses.

I never thought about artichokes in the IP! Another great idea!

We had an artichoke appetizer last night with dinner. It’s so simple but SOO good. Seems like artichoke pieces from a jar lightly cooked in a butter/garlic/lemon mixture. Melts in your mouth.

I like the IP artichoke idea too.

Tonight is IP pork ribs (we live in an apt, so no grill), potato salad, and what’s left of the 3-bean chili from earlier in the week.

I buy that lemon artichoke pesto at Costco and make a crab dip with it. Really yummy.

Today I cooked and baked. FallGirl’s DIY grain salad - used a mix of quinoas, buckwheat and millet. Added kale, cucumber and peppers, feta and pumpkin seed. Then a spelt banana bread - it uses 1 stick of butter but only 1/4 cup of sugar. Really good banana flavor, I can see repeating this.

Farmers box had chard today. I have never had it. Just not something we ever chose. So any good ideas? Tonight I will use some of last weeks box to make some ratatouille and grill some chicken.

Strange unseasonable weather continues here in MD. Beautiful day yesterday, perfect for grilling, and now chilly cloudy day here in low 60s. Rather than grill, I’m making chicken parmesan, using up marinara sauce I made earlier in the week. Since it’s been unseasonably cold, we still have romaine from the garden so I’ll make a salad. Dh made two loaves of sourdough this morning so we will have some with dinner.

Sauteed with some garlic is an easy way to prepare. Bacon and/or parmesan added to kick it up a notch. Or use it in a savory galette.

Actually ordering delivery today. This is only the second time we have done this in the past 10 weeks, with H at home all of the time and with Blue Apron, it’s just not something we think about.

Going to throw something on the grill - maybe hot dogs. And since it’s so gorgeous out we’ll dine outside. No idea what sides will be. Should have made potato salad. Maybe I’ll make some tomorrow as I’m planning on doing steak for dinner.

Spoiled my Mr. with Natasha’s Kitchen apple buttermilk pancakes for breakfast again. He says it is his favorite junk food! So. Good!! We did not eat lunch until just now… and it is almost dinner time. Finished leftover kabobs. I also made a salad from our patio-grown lettuce. So we will have some vino and cheese after our nightly walk and will call it dinner. ?

I’m going outside my box. Attempting some version of fried chicken and waffles. I’m making waffles from my sourdough starter and using a chicken recipe that came in an email from Thermapen. I have boneless breasts but they have skin. Will make a guacamole and add Serrano chili’s to a couple of the waffles for my H. I am normally not a waffle maker and I don’t think I’ve ever fried chicken. I’m thankful I didn’t give the waffle machine away when I Marie Kondoed my kitchen.
Last night was hard shelled tacos with rice and beans from a local Mexican restaurant. It was sooo good. Easy online ordering and easy pickup.
I can not believe how my healthy eating has gone downhill. I’m not sure why but my H has lost weight and I’ve only gained 2 lbs.
