Cooking when you’re Staying home

Baking hat ? on. Making cheese Danish this morning. Made the dough yesterday.

We picked up our annual 1/4 cow last week. About 30% higher than last August. Our supplier asked us a month ago if we could take it earlier: people who usually get it around now backing out due to COVID19 crisis. The grocery store has had limited beef products, frequently completely out of ground beef.

The Hunt for Red Meat is on! ? Mr. wants kabobs. If I can find pork tenderloin, I’ll make pork and pineapple kabobs tonight.

Due to the expense? Lack of freezer space due to storing other food products? I would have thought more people would be looking to buy in bulk right now.

Last night I did a pork butt in the crockpot to make carnitas and we had make your own burrito bowls. A big hit and easy to modify for the vegetarian in the family.

I’m not cooking much differently during these times, just more since we are all home for dinner every night. It is hard to meal plan with one vegetarian, one hungry DS who works out every night, a DH who is trying to be low carb, and me who is trying to be more plant based but not fully veg.

If they all would give me a meal plan, I am happy to cook it!

Chicken leek soup just went in the oven. Dogs are having kibble.

Lobster…

Tonight we splurged on a curbside wine dinner. Chilled pea veloute with crab, cassoulet and chocolate pot de creme. Local wine to accompany- we’ll see how that is. I’m more excited about the food.

Fish store is doing curbside pickup—we stopped by on our way fir a grocery pickup. Making Littleneck clam chowder tonight!

I promise tomorrow I will post something I’m actually cooking to keep in the spirit of the thread. We have not had a difficult time finding beef here locally, but chicken has been more challenging - somewhat ironic as I live in a major poultry growing area. In a short few months I have found myself going from eating almost no meat at all to eating substantially more meat and well, just eating substantially more in general. I think it takes my mind off everything else.

We’re actually having chicken tonight- beer can chicken on the grill, potatoes and salad. Leftover chicken , coleslaw tomorrow, cheeseburgers on Memorial Day. Happy Memorial Day weekend!

We’re in trouble today. There is a fresh loaf of sourdough and a pan of roasted garlic cooling on the cooktop. The house smells amazing. Do we just consider this dinner…?

Sounds like you need some fruit in the form of wine to round out that meal. :slight_smile:

Remembered to defrost a package of chicken breasts today, so we’ll have chicken something or other tonight. We just got a foster dog this morning, so it’s a little chaotic in the house today. I made a key lime pie for dessert with the many limes that arrived in my produce box this week.

Along with that fruit, a couple of cheeses sounds great and no need to bother with anything else (maybe some butter and salt…)

Takeout tonight but I made everything bagels today so we can have bagels, lox, and cream cheese with scrambled eggs for out weekly Sunday breakfast for dinner. To be honest, the local bagel store is open and I would have gone for the first time since March but I wanted to see if I could make them. I didn’t have bread flour (as recommended by most due to the higher gluten content) but I mixed 1/4 whole wheat flour (14% protein) and 3/4 regular white flour and they seemed to work. Boiled them in a mixture of water, baking powder and honey, then dunked in everything seasoning from Trader Joe’s and baked. They got a little crispy (have to work on that) but they taste great.

Everyone with access to fresh seafood are so lucky!!!

Speaking of seafood, tonight will be haddock broiled simply with some lemon butter and spices, creamed spinach, and oven roasted broccoli which I’m in the process of cooking.
