Cooking when you’re Staying home

Here we had turkey and beef sliders, grilled brats and chicken sausage, a quinoa salad with grilled vegetables, and a cypress salad with balsamic drizzle. Dessert was a gluten free vanilla pound cake with macerated berries and whipped cream.

I use this recipe but with half the mayo it calls for and I only add the bacon if I have it.

West Point (see avatar). Kind of fitting remembrance for Memorial Day though, obviously, grad was not on M Day last year.

Well, today we’re getting the summery weather we didn’t enjoy yesterday, when I prepared a grill-out meal. Of course, what do I have planned for dinner for this beautiful day…but a meal better suited for a cool and rainy day. Oh well.

Tonight is a frozen pizza jazzed up a little and arugula, watermelon and feta salad. I had my mother over for lunch today - nothing fancy. Burgers and homemade fries, watermelon for dessert. I’m getting tired of so much food.

It’s 90 today so big salad with the left over steak from last night added. Going to boil a few eggs to put in, too.

I am hosting a surprise zoom party tonight for my father’s 85th birthday so we are having an easy and early dinner. I made a big batch of meatballs last week that I froze so we will have meatball subs and salad, my kids will also have fries.

Last night we had ribs that my husband smoked all afternoon, but the bottom of his smoker has corroded, causing small grease fires inside his smoker. We are now in the market for a new smoker!

Tonight I needed something quick I can put together after a haircut appt.

I’m doing a stromboli of sorts with whole wheat tube pizza crust. Just unroll the tube dough, stretch out a bit, fill with “toppings” and some pizza sauce all along the middle of the dough. Then fold over both long sides and the ends and pinch closed. Put pinched side down on parchment on a cookie sheet and bake till browned. Slice and eat. A big bowl of cut watermelon with it.

I made a huge pan of ratatouille on Sunday. It came our really well. Last night friends came to socially distant eat on the deck. They brought BBQ for themselves, we had sushi (yum!) Tonight will be leftover ratatouille.

I have chicken wings in the original ,crock pot, with sweet and sour barbecue sauce. I bought fresh corn for .25 cents, or cucumber salad, or an artichoke. So many choices.

I ate my first peaches of the season yesterday!!! Yum!

Using some leftover chicken to make chicken salad with red grapes, toasted almonds, celery, onion, and some curry powder. Lettuce and a fresh baguette and I’m done.
