Cooking when you’re Staying home

@doschicos

How hot did it get today where you are?

I just checked our home weather station and it’s 98 now.

Not as hot as it was predicted to be. Only 86 instead of the 90 predicted. 84 right now. Never had to turn on the A/C. Not much humidity but heat and humidity are supposed to build tomorrow.

Not that humid here either. But tomorrow supposed to be worse.

We only have window AC’s. But we never put them in until July. I have the ceiling fan on and my house has lots of big trees around it, so still pretty cool inside - only 79.

Ropa vieja, white rice, black beans, tostones and yucca

Love my wifes cuban food?

^ Yum! :yum:

@sabaray - I’ve only used brown. I can imagine yellow or orange might get mushy. And full disclosure: the recipe I use is a little different, but isn’t online. It’s from the Aromas of Aleppo cookbook (my husband is Syrian-American, this is his food). I would take a photo from my cookbook but don’t know how to post it here.

@4kids4us Look at the Traeger smokers. My husband loves his.

@DeeCee36 Is this the version you make?

@DeeCee36 @sabaray I make the Ottolengli version of the rice, lentil, onion dish. I use green or French lentils. It’s delicious any recipe you use.
I’m impressed at how often many of you make dessert.
I think tonight will be a vegetarian meal. I have Brussels, sweet potatoes, onions so I’ll roast some of them up. I also have kale so will add a bit of that to crisp up at the end of the roasting time. I’m thinking some spices version of chickpeas. Sometimes I roast them till crunchy other times I just do them in a skillet. Will drizzle with tahini dressing. Maybe serve on quinoa or on farro.
Both H and I had picked up restaurant lunches so I don’t know if we will be hungry for dinner. I am always surprised at how a lunch “out” makes me sleepy.

@doschicos - I make a very similar chicken salad and it is delicious!

That’s the one!

Mine is similar too- just no curry.

Got our rotisserie chicken from Costco delivery today so we had taco bowl Tuesday. Made Mexican rice in the instapot. Had everything else in the house. The chicken was so large the rest will become chicken salad tomorrow. I do mine with apple, cheddar, craisins, dates, celery and onion with a lime flavored dressing. Stole the idea from a farmers market vendor a couple of years ago.

Gearing up to walk to the restaurant to pick up some pizzas! Will add a salad and eat on the deck. My cooking duty was fulfilled today - I made a giant pot of borscht again. Mr. did not object.

We’re starting on our summer recipes: cold soups, salads, chilled pasta dishes, frozen drinks, etc. Here’s our forecast starting tomorrow:

Wed 105
Thu 107
Fri 109
Sat 107
Sun 105
Mon 102

No more courtyard cocktails or outdoor dining. :frowning:

Ha @ChoatieMom you must be in Phoenix. I feel your pain (heat). Today was taco Tuesday. Home made corn tortillas fried into shells, homemade pico de gallo, and pinto beans. Wash it down with some sangria. Buen provecho!

We’re about 45 miles SE of Phoenix. Dreaming of our days in New England and envying those of you with lots of trees and large bodies of water.

Lablabi, griddle cooked yogurt flatbreads and cherries. I’m trying to teach oldest son a few more inexpensive, tasty, nutritious recipes before he goes back to school. He loves my Lablabi but has never helped make it and since it’s a great inexpensive, tasty and nutritious recipe, hoped he’d be able to make it with me. Unfortunately his homework ran late and he was only able to help eat the finished product.

@milee30 i had to look that up, it sounds delicious. Adding it to my list of things to try.

@milee30 care to share how you make your yogurt flatbreads??
