Cooking when you’re Staying home

Last night I wanted to make something out of some ripe bananas I had. I’m not much of a smoothie person and especially don’t care for banana in a smoothie.

BUT I wasn’t feeling like typical banana bread…I had made some of that last month.

So I tried this. No added sugar beyond the semi sweet chocolate - though I did drizzle a little honey or maple syrup and butter on mine - it’s good!

I happened to half 1/2 container of ricotta which was handy!

I was able to get sugar and flour today at the market. I want to try the no knead bread this weekend.

I’m actually cooking less now. I started cooking more at the first of the year because I wanted to eat healthier. Now I am working from home and H is not working (he has an office job, but they are not allowed WFH). Since he has more time, he is cooking. Three evenings/week we have our Blue Apron meals.

I used to enjoy baking, but trying really hard to avoid sweets these days, so no…

I made a quick version of my mother’s chocolate chip cookie recipe to mail my kids today. She puts the whole batch in the pan, like bar cookies, and they bake up very cake-like. I did them in two batches and spaced a couple inches apart from one another. Socially distant cookies.

I made grilled cheese on rye bread tonight with a cherry tomato, red onion and gorgonzola salad. Been ages since I made grilled cheese.

Did not take long to convince Mr. that a nice takeout dinner would be good both for my sanity and our favorite restaurant’s survival. :slight_smile:

Heard that 1/3 of food consumed in the US is restaurant-prepped. Was. Before this Covid crap.

We still do delivery 3-4 times per week. My daughter is doing most of the cooking.

This reminds me that i needed cash for tips, we ran out of cash lol. (I wiped money with clorox wipe).

@Nhatrang , I would imagine most restaurants prefer everything to be cashless right now. Can you just add a tip when you order with a credit card?

My sister sent us a really great food gift that we can cook tonight at home. Spoonful of Comfort -soup, rolls , cookies, and a soup ladle- all very nicely packaged.

I made an apple crisp yesterday for the first time. It was a big hit with everyone here.

My friend who lives an hour away want to exchange food with us. But we are “fighting” over who will drive to whom. They are over 70’s and live in a beautiful pent house apartment in Jersey city, I live in a suburb an hour away. I said if anyone who does the driving it should be me b/c i am younger. But she said she could use a drive to see the view beside the Hudson river. We would exchange the food and no hugging on my lawn. Would be more difficult logistically for me to go to their apartment.

She is going to make chicken parm because my kids love Italian. The problem is I don’t know what to make, i am so not prepared. I may just cheat and order their favorite dishes from the Thai place. I think I am going to cry when I see her lmao.

Dh is taking advantage of this “working from home” predicament and smoking a pork butt outside all day. Sadly, I was only allowed by the store to buy one. It would’ve been nice to smoke two, make a huge batch of pulled pork from it and freeze half for later use.

I’ve been going over-the-top in cooking since both our kids are home, but I need to shift my diet back to normal - I’m bulking up like Jabba the Hutt !!

No idea about Shark Tank or how she even found about it. We will try it tonight!

I’ve sent Spoonful of Comfort when my kids were sick. A bit expensive but it was well appreciated.
I’m going to try no knead bread today. Any tips?
For those baking I’ve been putting half the baked goods in the freezer.

Don’t overmix.
Cover it and let it do it’s thing once mixed.

I do my final shaping on parchment and then just lift that parchment and plop in the hot dutch oven for baking. Much easier!

For the first part of the stay at home time, I was so good about making primarily healthy things. But that kinda went to Hell today and I made a batch of Candied Bourbon Pecans. Which I then ate huge handfuls of. Oops. Putting those away to share (as long as the family discovers them in the drawer and gets to them before I eat them all.)

Making baked ziti and a salad tonight. H can reheat if he ever comes up for air.
