Cooking when you’re Staying home

@Rivet2000, I looked at those tomahawk steaks but was just overwhelmed by the idea of cooking them. That sounds like an amazing graduation meal! I would love to know how you prepare your mirror glaze. Congrats to your S!

@Rivet2000 that was a menu full of love. Seriously, I sort of teared up reading it because unless that is the way you eat everyday, I could emotionally feel the thought and labor of love in pulling it off and making the day memorable and your son’s graduation fully celebratory.

Sunday has become pizza night in our house. Yesterday I roasted peppers and a garlic head and used those for the “sauce” layer. Ricotta and mozzarella for the cheese. Topped with artichoke hearts and kalamata olives. Penzey pizza seasoning sprinkled on top along with some fresh basil leaves. I think it was one of my best attempts yet.
I’m going to have to look into Snake River @sabaray and @Rivet2000. I’ve never heard of the company and yesterday my brother texted a picture of his fancy hot dog meal and said he ordered the hot dogs from Snake River. Rivet that sounds like a wonderful celebratory meal.
Tonight will be vegetarian. I have a lot of ripe avocados and a head of cauliflower. Will probably do some version of a Mexican bowl.

@BunsenBurner I know about that oil. But it was not swimming. I checked several times and read the story too. It is a lot of veggies and that with a cup of water in the pot just coated everything. https://www.mediterraneanliving.com/recipe-items/horta-greens-and-potatoes-in-the-instant-pot/

For those commenting on how labor-intensive eggplant parm is…I agree, though I thought I’d pass along two shorcuts I deploy to make it a little less so:

First, I don’t fry the eggplant. I dredge in flour, then egg, then breadcrumb mixture and place a very well-oiled baking sheet and top them off with a hearty spray of oil. I bake at 375 for about 40 minutes, flipping over halfway through. They are “oven fried” I guess, but always come out crispy and delicious and so much easier than babying them 4 or 5 at a time over a frying pan (and easier cleanup). I can generally fit a dozen on a baking sheet, so I can prepare 24 rounds this way every 40 minutes…which leads me to my next tip…

I usually take a few hours and prep a bunch at once (if there are good ones at the store or when my garden starts spitting them out in insane quantities). The rounds freeze beautifully and I can pull them and a container of sauce (something else I always make in big batches and keep in the freezer) out and have eggplant parm on the table in less than an hour.

Not sure what’s for dinner tonight. Right now it’s looking like Sancerre and sesame sticks! @emilybee is right - there are a ton of great cooks on this thread. Do you all have a specialty that your friends and family always wants you to make? My mother always comments that I only eat twigs and sticks (not true) so clearly she doesn’t think much of my cooking. I wish I had more time to plan and prepare.

Tonight was pasta bolognese, fresh garlic bread and garden salad.
Such an easy meal to prepare and no one is ever disappointed. ?‍?

I had ground beef leftover from the other night so it became meatballs and marinara on ziti and used the last of the fresh mozzarella and basil for more Caprese.

Panko chicken, spaghetti with marinara, mozzarella and Parmesan. Sautéed spinach in olive oil and garlic. Glass of red. Must be Italian night!

To answer @sabaray question…My kids have lots of breakfast requests when they are home - scones, popovers, dutch baby(ies), savory waffles…

Dinner wise not really one type of cooking…my chicken parm gets good reviews, lemon butter chicken, chicken enchiladas.

Tonight is meatless Monday so I just did a big salad with various veggies, manchego cheese and a nice jammy egg.

Burger dinner tonight with baked beans, snow peas and the blueberry cucumber salad. Simple. It was nice outside so dinner on the deck.

Succumbed to temptation and made another loaf of Dutch oven no knead bread. Took it out of the oven at 9. Along about 9:30 the bread knife and butter knife conspired to do me in. MAN, that bread is good!

Tonight I made lamb burgers with goat cheese stuffed inside along with a mint sauce. D made a cucumber, cherry tomato, and shallot salad with olive oil and lemon. My H did the Whole Foods order yesterday and he got ice cream sandwiches. We had those for dessert. He also got a dried bean order from Rancho Gordo. He’s going to make pulled pork tomorrow and Boston beans.

Tonight was a new recipe Cauliflower and black bean tacos with a lime crema. My H had his on warmed corn tortillas and I had mine on a bed of quinoa. Was a nice meatless meal.

@Bromfield2 - are those lamb burgers from Silver Palate? H loves those but I think it’s a raspberry mint sauce.

Tonight will be fish tacos with chipotle slaw and avocado. Side of doctored black beans probably.
