Cooking when you’re Staying home

H asked for steaks and chocolate ice cream for Father’s Day. Probably add some crispy fries and salad for those who eat greens.

@jym626 mango salsa uses both orange juice and lime juice. Also Mexican red cabbage slaw can be made with both of those.

My H keeps talking about pineapple upside down cake. Apparently, his mother made it when he was a child and it was his favorite. H has mentioned it several times recently. So, my daughter suggested that we make the cake for him for Father’s Day. I found a number of recipes online. D is shopping for ingredients tomorrow. Has anyone ever made this? If so, do you have any tips or a recipe?

Tonight was grilled cheese sandwiches made on fresh sourdough and cherries.
My oldest is an organizer and she has her brother and his wife coming over on Sunday. D will pick up pizza from a favorite place with my husband’s favorite toppings. I’m going to attempt sourdough cinnamon rolls from the King Arthur flour website. Hoping for some sunshine as we plan to social distance outside at our pool.

Thanks! If I’d had one of these gizmos or knew what it was I would have not given up slicing asparagus for the sliced asparagus and Parmesan cheese salad I mentioned a few days ago. I was using a potato peeler!

Wow that’s a lot. I’ve got a bunch of veggies from our Friday delivery plus a double supply of asparagus so will order a mandarine. Am learning a lot tonight. I looked up on wiki and looked at pictures and thought “it looks like my bagel guillotine” And discovered it was invented by Guillotin !

I ran out of time so couldn’t edit the air fryer post to add that we have a whole lot of potatoes so that will be my first air fryer experiment. I will report back, but remember, I am not a cook. That said I did make chocolate pudding tonight from scratch (it’s easy) as the milk was starting to get old.

I make it a couple of times a year for my kids. They love it. Recipe pretty simple really.

I was looking up pineapple upside down cakes recently because that is a first order of business when we all get back in the office - making one for our new department chair whose b-day was during WFH and who we promised to make when we return.

The key is a nice moist cake and plenty of “topping”. If anyone has a recipe please share!

Had to find another kale recipe. I bought a bag and have already made 2 big grain salads and there is still some left. I think it’s interesting that I don’t seem to be able to buy a small amount of kale. Good thing I like it!

For pineapple upside down cake, I use this recipe. Simple, but there may be better out there. Sometimes I incorporate fresh pineapple.

I do a white wine sangria with sauvignon blanc, St Germain elderflower, Cointreau, strawberries, raspberries, peaches, oranges and grapes. It is a very refreshing summer drink.

Just made a couscous, black bean, corn, and red onion salad with a lime/cumin vinaigrette for tomorrow. Will also make cherry tomato, bocconcini, and basil salad, and an arugula/watermelon & feta salad to go with a variety of sliders. My H is not a big BBQ fan and doesn’t eat red meat so I have to get creative, otherwise dinner will look like every other night. The kids will all be here so I will do shrimp, mini-dumplings (TJs) and crudité as a light lunch. Dessert will be sundaes made with the Anderson’s frozen custard (a Buffalo specialty!) I ordered from Goldbelly. Truth be told, that’s my favorite but he likes it too.

I love Anderson’s! Cinnamon especially. Those salads sound great.

@sabaray, me too but cinnamon is a seasonal flavor and not available right now! Every time I go home to see my mom and sister we have to do a Buffalo food tour, which for me is Ted’s for hot dogs and onion rings and Anderson’s for custard and beef on weck. I love wings and though I’ll never turn down a trip to Duffs, I can get them around here and they’re almost as good. Generally I stay completely away from fast food but oh those Buffalo specialties of my youth get me every time!
