I like the flavor of thighs but my H won’t eat them. I can sometimes sub thighs for breasts in recipes where the chicken is diced and in a sauce. Or for something like enchiladas where I can make a mix. He could easily be a vegetarian and a lot of meat products Gross him out. He likes his chicken breasts boneless with all the slimy parts trimmed.
Tonight is steak I defrosted. So far I know we will grill it. How to serve it is still up in the air. Options are sliced as tacos with beans and mango salsa or just grilled and served with cauliflower risotto and roasted carrots. I know my H will prefer it taco style.
I think that thighs/dark meat soaks up the flavor of marinade or other things being roasted with them more than breasts. I’m not usually a fan of dark meat on it’s own but for some reason on a thigh or wing I like it. H actually prefers dark meat on a turkey! He always gets the leg!
So I made pumpkin spice muffins (using the recipe in Elise Kopecky’s "Run Fast, Cook Fast, Eat Slow book). H had to go to 3 different grocery stores before he could find a canned pumpkin! It’s flying off the shelves.
Also made a grain salad for this week’s lunches and hard boiled some eggs for snacks.
^^ This is a fact. I just heard about the pumpkin “shortage” (not in quantity but stores can’t keep it on the shelf). I just returned from a local store and there was not a can on the shelf.

Has anybody yet mentioned that funny commercial for a food delivery service where the couple embrace and get all excited and celebrate that now they don’t have to cook at home any more!!! ?? Seems like a large part of the audience is enjoying cooking at home!

I had early morning insomnia and spent about an hour watching chicken recipes on YouTube at 3 am.
At 9 am, if only I could remember which ones I thought “Oh yeah. Definitely making that one.”
Well, decided none of us needed the sugar and fat of a rich dessert, so opted to use 2 of the paw paw in my morning smoothie in place of banana. 2 used, 16 remain in my fridge, begging for ways to eat them
It’s supposed to hit 90 degrees here by the coast today so no cooking tonight. I will put together a nice charcuterie with a cold, crisp rose.
We are cleaning out the freezer and H pulled out a whole chicken which he grilled rotisserie style tonight (along with grilled veggies). It was pretty good but it’s a lot easier to pick up a rotisserie chicken at Costco or Giant for about the same price.
@FallGirl I have tried to do so many rotisserie chicken recipes over the years and none of them come close to the Costco chicken!
I agree - unless you’re doing something spectacular to the chicken the Costco one (or otherwise) is hard to beat for convenience, taste and price!
BUT I’m impressed your H can rotisserie a chicken!
