Cornell - Human Ecology vs. Agriculture/Life Sciences

I was recently describing my interests to someone - foreign languages, philosophy, human rights, food ethics - and he recommend that I look into agriculture. This is never something I had considered but it is certainly a way in which all of my interests converge. My experience as of yet comes from working with Oxfam, and my ideal job would be working with the UN...especially if I could work with them in Latin America. I'm thinking that the International Agriculture and Rural Development major in CALS would work perfect for me, but would something in Human Ecology also be somewhat of a good fit? Would CALS even set me up for the type of career I'm looking for? I'm applying to other top schools, such as U. Chicago, USC, McGill, Reed, and Barnard. I had never really considered taking an agricultural path but it seems to work for what I'm interested in, and i was very excited when talking about it. My transfer essay is written and says nothing about agriculture in it, and I can't tailor it to do that because none of the other schools I'm applying to have that. I did mention that I wanted a school with an international studies major and emphasis on languages, and would CALS even be able to provide that? Any advice is appreciated.
