I'm just curious how the number of AP classes affects an admissions person's view. When there are only like 1 or 2 or 3 available then when someone takes them all they chose the hardest course load. What about schools that offer a huge number, like 20+? Unless you are insane you won't get around to all of them so is there a number that they consider acceptable, like enough so that you are challenged?

I assume that part of the answer is your counselor's responsibility. On the counselor and secondary school report forms of many applications, including the common application (if i'm not mistaken), colleges will ask about your workload in context of other students at your school (not demanding, average, demanding, very demanding, most demanding) and so forth. As with my high school, students are not allowed to take AP courses until junior year, and must take honors courses in lieu of AP's freshman and sophomore years. Thus in my case, my course rigor would be determined by a combination of AP and honors classes.
