I’m sorry to hear your friends were such a pain. It’s hard to make decisions for weddings, and the bride/groom and guests ought to be gracious and understanding about how it works out (except where awkward like the Grandma snafu mentioned by another poster).
The OP’s kids do not seem stuck on it being a destination wedding, but want it to be where there are lots of flowers, and also many of their guests live in the tri-state NYC area. So, I just want to mention that several of my daughter’s friends (based in NYC) have had their weddings at the Brooklyn Botanic Garden.
That is what we did when one of my husband’s best friends had a wedding in Mexico and we live in Massachusetts. I stayed home with the little ones and he went. It worked out.

soozviet - the Booklyn Botanic Garden is gorgeous and fits their theme. I know they looked at it. I think it was $$$ and required a min of about 90 guests with restrictions to weekdays only for smaller weddings. I will bring it up again. Fendrock - I will send the Fruitlands recommendation. The Trustees do have some wonderful venues. It will be local for them so it is worth a look. It will be a destination for most of the guests.
Planning is so time-consuming. Almost all the venues do not have the costs and requirements spelled out on their site. They want to be called or emailed and then it takes time for them to get back to you because they are so busy.

Crosskeys is very close to where I live. Beautiful venue. Local area has many other wineries near by, and the surrounding area is lovely if guests are looking to make a mini-vacation out of the trip.

My son and his fiancee are heading to a wedding in San Miguel De Allende, Mexico. They are going to spend a couple of weeks there and work from an AirBnb.

It is a lovely Mexican colonial highland town. Earlier on, it was a haven for American artists and is now full of expats – mostly Americans and Canadians. There were a lot of divorced women in their 50s who seem a little lost and are finding themselves. It is sunny and pretty dry.
We have been there several times as we have a friend who has a house there that she inherited from her father, who was a painter and bought the house eons ago and moved his family there for much of her childhood. The food is good.
I have traveled a lot in Mexico and prefer other places (Akumal), parts of Baja California Sud, but have enjoyed it there. Omnicrom permitting, we may go again this winter.
