I know that some of the colleges don’t accept all of the AP tests, and some not any. But if you did and passed (not saying I will ;)) take all of the tests they DO accept, would they actually give you that many credits? Is there a limit?

Well, that’s not quite correct.
Dartmouth does not grant AP credit at all. Harvard, Yale, and Brown effectively don’t give credit either. They do, but Harvard you need to activate Sophomore Standing (which few do), Yale only gives you Acceleration Credit to graduate in fewer than 8 semesters (which few do), and Brown requires 8 semesters to graduate.
Columbia limits AP credit to 16 points (about 1 semester).

AFAIK, Princeton does not limit AP credits.
So 3/8 are limitless. Less than I expected
Penn does not limit AP credits earned.
