Do the SAT Subject tests change? If so, what is the newest version?

Yes, but they are also recycled.

Probably depends on the subject, but I don’t think anyone other than the CB can give you a definite answer, and I doubt they will be forthright.

Last year CB published a few more official subject tests (on sale in CB website and elsewhere.) The actual tests are very close in format to those tests. When it comes to content the tests cover a variety of material so some times you get more question on X and less on Y. But in average the published tests give you a very good idea of what to expect. Those newer tests are very similar to the blue book tests so the format did not change for a while now.
