IM thinking of taking either two; how do they stack up besides each the and how difficult will they be?

I can’t help you with the sustainability major as I have no experience there. I do know some petroleum engineers. To get this degree you will need to complete calculus, thermodynamics, fluid mechanics, and geophysics courses, so you need to be comfortable with math and physics. Most people find the required geology courses to be interesting. It can be a great career. I suggest you look at the course descriptions for these two majors at the school(s) you are considering; that should help you answer your original question.
