With undergrad admissions, I'm sure it's a no-brainer that honors/AP was expected. But what about with grad school admissions? From what I've read so far, a lot of it seems to be focused on GPA, test scores, recommendations, research/field experience, and maybe if you've published.

Yes, it can help for a couple of reasons. Graduating from an honors college shows that you were a top student. Plus, honors students usually have the benefit of having smaller classes, allowing them to develop closer relationships with profs. Being closer to profs can help lead into getting some research experience with the prof or glowing recommendations down the road.
