does it really matter which major/interest you put when applying?
for example, would applying a more competitive major/interest jeopardize your chance to get into a school?
and is it almost guaranteed that we are always able to change majors? because i heard in america, we choose majors in the third year right? (ps. im an international)

It's different depending on the school and major. Most schools won't hold you to what you put on the applications because you usually don't pick your major till some time in your second year. However, some majors and some schools require you to directly apply to that major.

It only helps if you are a girl applying to engineering school. I have not seen it helps otherwise.

A related question --

I'm really really interested in one field and want to focus on that in some of my essays. However, my friends say that since I haven't done anything outstanding in the field (and have only demonstrated interest in it in the past year or so, because I developed this fascination during junior year), I would look dumb by making a big deal out of how much I want to major in this particular area. I dunno, though; I want to tell the colleges how excited I am about it... :/ Would this be okay?

The significant ways that I have demonstrated interest are by taking a two-week course over the summer and by getting a schoolyear-long internship in the area.
