Well, I'd like to Double Major in a science and an art, so would like some ideas if possible, just to see if any other avenues open up that I haven't already considered.

I'm thinking Pol Science/Economics for the art but am not too sure what to take as a science major alongside it. Nothing chemistry based. I enjoy Physics and would like something with a bit of application. I know engineering sounds ideal, but the work load would probably kill me. I basically want something intellectually challenging that I will enjoy and (not going to lie) that I can boast about a little :p Make me seem smart :p

So is there anything similar to Physics out there? I would choose Physics but am worried about the 'marketability' of that major, so to say.

Do political science/economics + earth sciences (geology).

Not only does it have some “marketability”, but it has current political and economic relevance on both the national and international levels, e.g., environmental/natural resources policy and economics; natural hazards/emergency management; strategic minerals; energy policy; climate change, etc.
You’ll might have to take chemistry. but probably not more than a semester or two of general chemistry.

Alternatively, you could do a geography major with an emphasis on a physical geography/environmental science track. Just make sure you do a sequence of courses in GIS, which might improve your employment prospects and also has relevance in the social sciences.
