Is it possible to double major in Computer Science and Political Science? If so, what careers could this lead to?

Possible? Yes, it is possible, although the low level of overlap means this will likely take a while - 6 years probably, assuming normal loads and minimal AP credit. Generally speaking it is possible to double major in ANY two undergraduate fields, provided there are not special enrollment controls on the major (as is the case with many engineering fields).

Career? Realistically you will probably need to pick one or the other as a career and make the other a hobby. There might be a few jobs out there for a new graduate with this double major, but I cannot imagine that you could not get these same jobs with a single major and perhaps a minor (or even just an interest).
