does anyone how much the acceptance rates differ?
A lot of early applicants are deferred so their applicants are considered with those who met the final deadline. Some of the later applicants will be those who considered elite schools and UW is their safe choice. Hopefully there is no difference- I believe they keep plenty of places available so being early does not give any advantage over more deserving students.
